Derby Dreaming

One of the things I dream of doing is making it to the Kentucky Derby one year. No I am not big into horse racing but just the whole experience of one of the biggest events in the south. Those who know me well know I don’t like to wear hats, which is a requirement. And add to that the bigger the better.





But this one I think I would enjoy wearing. What is one event you dream of attending?

BBQ Cheddar Jalapeño Chicken Meatballs

I was looking for a new recipe to try.  I couldn't find anything in my cookbooks so I turned to the next best place, Pinterest.  The link goes to Slender Kitchen site.  



1 pound lean ground chicken
1 jalapeño, seeded and diced
1/2 c. deducted fat shredded cheddar cheese
1/4 c. cilantro
1 egg
1/2 tsp. cumin
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. Worcestershire sauce
2 tbsp. onions, diced
1 garlic clove, minced
1/2 c. BBQ sauce 


Preheat the oven to 425º.  Line a baking sheet with foil and spray with cooking spray.  
Mix together the chicken, jalapeno, cheese, cilantro, egg, cumin, salt, pepper, Worcestershire sauce, onions and garlic.
Roll into about 4 meatballs per serving. 
Bake for 20-25 minutes until completely cooked through.
While still hot, toss with your favorite BBQ sauce.






I used KC Masterpiece Sweet Chipotle Sauce.  These turned out really good.  But sadly not so good warmed up the next day.

I did well until the last two weeks of March.  I am so happy to see a new month to start it all over again.

I only got two finished.  

**  Do one thing for myself.

I did this.  By getting some more sleep.
