Esquites (Creamy Corn Salad)

I have been looking for another side dish to go with tacos besides Spanish Rice.  I finally found one to give it a try in the May issue of Cooking Light.

Esquites Creamy Corn Salad

2 tbsp. olive oil
2 (16 oz) packages frozen whole kernel corn, divided
2 tsp. sugar, divided
1/4 c. canola mayonnaise
2 tbsp. fresh lime juice
1 1/2 tsp. ancho chile powder
1/2 tsp. ground coriander
3/4 tsp kosher salt
2 ounces Cotija Cheese, grated (about 1/2 c)

Heat a large cast iron or there heavy skillet over medium-high heat.  Add 1 tbsp. oil to pan; swirl to coat.  Add half of corn and and 1 tsp. sugar; toss to combine.  Cook, without stirring, 3 minutes or until corn begins to brown on bottom.  Stir and cook 3 minutes or until most of the kernels are browned.
Remove from pan.  Repeat procedure with remaining tablespoon of oil, corn and sugar.
Combine mayonnaise, lime juice, chile powder, ground coriander and salt in medium bowl, stirring with whisk.  Add corn; toss to combine.  Sprinkle cheese over corn; serve warm at room temperature or chilled.

The only thing I didn't like is that it had to much lime taste to me.  So next time I will cut it a bit.

To many choices

I made one of my goals for this month to finally buy a diploma frame.  Yes I took long enough but I couldn't decide what style I wanted and then a couple years ago I ran across one with a picture of the Lyceum on one side of it and fell in love with it but at the time didn't have the money to buy it.  That stinking budget.  So tonight I sat down to make the purchase online and now can't decide.  Who know there were so many choices of the picture in the frame.

I only have a couple days to decide which one I like the best.

Body Scrub

I ran out of the body scrub I had on hand and decided it was time to try one of the many recipes I have pinned.  I went with a brown sugar olive oil one since I had all the ingredients on hand.

How easy is a cup of brown sugar and half a cup of olive oil.

This scrubs leaves my skin so soft I don't need any lotion for a day.

Cheesy Garlic Pork Chops

I pulled some pork chops out of the freezer and had no clue what I was going to do with them and then the Skinny Mom June Supper Club email came out.  The one for tomorrow is a pork chop recipe that sounded amazing. 

4 (4 oz) boneless, thin pork chops
2 tbsp. garlic, minced
1/3 c. brown sugar
1 tbsp. butter, melted
1 tsp. paprika
1/2 c. reduced-fat, shredded Colby-jack cheese
salt and pepper, to taste

Preheat oven to 350 degrees.
Rub both sides of the pork chops with garlic and brown sugar.  Place in square baking dish.  
Drizzle butter over top.  Sprinkle with paprika, salt and pepper.
Bake for 20-25 minutes or until internal temperature is 155 degrees.
Remove from oven and sprinkle with cheese.  Bake for another five minutes.  Serve immediately.

June Goals

It is hard to believe we are through five months of 2015.  Where is the year going?  I started getting myself back on track in May.  I started hitting the gym and doing videos more along with eating better.  I even got in a couple morning workouts in too.  I didn't weigh in at the beginning of the month so since April 1st I have lost another 2.2 pounds and another half inch off both my abs and hips.  

June Goals

**  Complete the 21 days arm challenge.

** Complete the JessicaSmithTV 5 mile challenge.

 ** Read 3 books. 

 ** Buy my diploma frame.  I want to finally hang the pictures in my office.  My crest will be ready to pick up from Michael's this weekend.

**  More job hunting.  

May Goals

**  Hit they gym 3 days a week.

Accomplished this.

** Do 3 videos a week.

Accomplished this one too.

** Read 3 books.  My goals for the year is 50 books on Goodreads and I am way behind.

Hit my goal and more.

** Try one new recipe.

I actually did two. 

** Finish the last ornament from last year and the one from last month.

I still need to finish the one from last year.
