Sauteed Chicken with Roasted Pepper Pasta

I am still on a kick of finding a dish that is on the lighter side.  I am in the mood for spring after a couple weeks of snow and ice around here.  This recipe from Cooking Light fit the bill.





6 o. uncooked rotini
12 baby bell peppers
3 oz. fresh mozzarella pearls 
2 tbsp. olive oil
2 tsp. white wine vinegar
2 garlic cloves, minced
1/2 c. chopped parsley
1/2 tsp. salt, divided
4 (6 oz) chicken breast halves
1/2 tsp. black


Preheat broiler to high.
Cook pasta; drain.  Place in a large bowl; keep warm.  
Cut bell peppers in half lengthwise; discard seeds and membranes.  Place peppers, skin sides up, on a foil-lined baking sheet; flatten.  Broil 6 minutes or until blackened.  Let stand 5 minutes.  Peel; cut into strips.  Add peppers and cheese to pasta.  Combine oil, vinegar and garlic; stir into pasta mixture.  Stir in parsley and 1/4 tsp. salt.  
Heat a large skillet over medium-high heat.  Coat pan with cooking spray.  Sprinkle chicken with remaining salt and pepper; sauté 6 minutes on each side or until done.  Slice chicken. Serve over pasta.




The dinner was good except for the peppers.  I am not a big fan of jar roasted bell peppers so I am not surprised that I didn't like these either.  

I will make this again.  And will be making a snack out of those little balls of yummy mozzarella.

Spicy Almonds

I have been looking for some new snacks to make for the office.  I know me if I don't find some healthy options to buy or make I will fall back on junk food way to much.  I found this one hanging out in my cookbook.  I have no clue where I got it or how long it has now been there.


Spicy Almonds

1 tbsp. sugar
1 1/2 tsp. kosher salt
1 tsp. paprika
1/2 tsp. ground cinnamon
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. cayenne pepper
2 1/2 c. unblanched almonds
1 tbsp. oil


In a small bowl, combine the first seven ingredients.  In a medium bowl, combine almonds and oil.  Sprinkle with spicy mixture; toss to coat.
Place in a foil line 15x10x1 inch baking pan coated with cooking spray.  Bake t 325º for 15-20 minutes or until lightly browned, stirring twice.  Cool completely.  Store in an airtight container.





These turned out really great.  And I forgot to take a picture.

March Goals

Right now I am just looking forward to Spring and I hope it starts quickly this month.  But the idea of spring getting hear faster is not looking good when more snow is predicted for Wednesday.  I know I shouldn't complain considering how slammed the NorthEast has had this year.   I live in Mississippi and should not have to see winter weather 3 weeks in a  row.   I struggled a bit this month and the proof would be that I gained back 3.3 pounds.  Even with that weight gain I lost an inch off my hips and didn't gain anything in my abs.  So something is working or at least I am going to let myself believe that for now.


March Goals

**  Hit the gym 3 times a week.

**  Do three videos a week.  

**  Eat out once a week or less.

**  Finish an ornament I didn't finish last year.

**  Clean out my dresser.  



So how did I do last month?


February Goals

**  Hit the gym three days a week.

I didn't exactly get this done.  I blame the cold but I did workout at home with videos.

**  Finish one of the ornaments I didn't get completed for last Christmas.  

Yeah this didn't happen.  I don't feel so bad as I have two to complete by November.

**  Eat out no more than once a week. 

This one was easy to hit after no spend Janaury.  And I want to keep it up for the year.

**  Do three workout videos a week.  

I exceeded this the last two weeks of the month thanks to the really cold weather and all the winter weather that came in.  

** Paint my office.

This one was completed too.  



I picked up a Garmin vivofit tracker Friday.  I don't usually spend that much on a reward for hitting my goals or close to it.  Granted I had a rebate card I had not spent yet.
