Hold the ice

The arctic weather has hit my area.  We heard at the end of the week to expect ice Sunday night into Monday.  The biggest reaction around the office was that sucks as we are already off.  


Well it turns out the weatherman weren't wrong this time.  We got freezing rain and sleet.  The above is what the Jeep looked like around 7:30 Monday morning.  

This is around 11 and about a hour before it finally stopped.  I had gone out the the Jeep to pry open the door in case I lost power so I could get in and get warm.  

It was way to icy to get out of the driveway yesterday so I worked from home.  This was the best foot warmer is so much better than the space heater under my desk.  

To top this off we got a dusty of snow overnight.  But not enough to keep us home today.  The sad part is the weathermen are talking more icy stuff Friday.  UGH!!

President's Weekend

I spent President's Day Weekend painting my office.  I had gotten tired of the Sour Apple color I painted it about six years ago.  I picked out the color about six months ago and just now had time to paint it.  I picked Woodsmoke from the Eddie Bauer collection at Lowe's.  
I still have to put the pictures on the wall.  I am going to wait for that until I buy a diploma frame.  
Believe it or not I took all these pictures at the sometime this morning.  

No clue what I was watching at the time.

Cajun Oven Fried Chicken

Picking out a recipe to try this month wasn't easy.  I finally decided on this one from Cooking Light.  

1/3 c. low fat buttermilk
1 tbsp. salt free Cajun seasoning
1/2 tsp. salt
1 c. panko breadcrumbs
2 chicken breast halts (about 1 pound), skinned
2 chicken drumsticks (about 1/2 pound), skinned
2 chicken thighs (about 1/2 pound), skinned

Preheat oven to 400º.
Combine first 3 ingredients in a shallow dish.  Place panko in a shallow dish.  Dip chicken, one piece at a time, into buttermilk mixture; dredge in panko.
Place chicken on a baking sheet lined with parchment paper.  Lightly coat chicken with cooking spray.  Bake at 400º for 40 minutes or until done, turning after 20 minutes.

I chose to use chicken tenders.  They are so much easier to portion out and freeze for later.  This recipe turned out really great.  I will use it again.

February Goals

Okay 2015 is already flying by.  Can it slow down a bit?  The year has started off well.  I even started to make some steps to making changes to the year.

February Goals

**  Hit the gym three days a week.

**  Finish one of the ornaments I didn't get completed for last Christmas.  

**  Eat out no more than once a week. 

**  Do three workout videos a week.  

** Paint my office.

So how did last month go?

January Goals

**  Hit the gym three days a week.

This didn't happen.  Thanks to the nasty sinus infection. But I did the best I could.  Last week was the first time I did hit three times and it felt great.

**  Complete the JessicaSmithTV Fit in 15 challenge.

I finished this or so I thought.  It turns out it is a 5 week program and not just for the month of January.  But I did manage to finish up all the videos yesterday.  

**  Try one new recipe.

I did that and picked a healthy one too.

**  No spending on anything but essentials.

I hit this goal.  It wasn't easy and I got a really bad craving for Starbucks.  I got help with that when the bestie sent me a gift card.  I had been spending way to much money there the last couple of months and one of the reasons that prompted me to go with a no spend month.

**  Finish two cross stitch projects.  I have a couple in progress I keep setting aside.

This one was slightly done.  I did finish one and of the other three I had been working on I threw two away as I couldn't remember who I was making them for or wanted them now for myself.  I worked hard on the third one and got close to finishing it.
