Watermelon Sherbet

What is a girl to do when she can't eat all of the baby watermelon she bought?  Why she goes looking for a recipe on Pinterest of course.  I decided on the one for watermelon sherbet from Baked by Rachel.  I have been craving watermelon for a week or two but couldn't bring myself to buy a container of the precut at the store so when I saw The Fresh Market had the baby seedless ones on special this week I ran out and got one during lunch.   

2 c. pure watermelon juice, chilled
1 1/2 c. heavy cream
3/4 c. granulated sugar
pinch salt
1/2 c. mini chocolate chips

In a large bowl, combine chilled pure watermelon juice with sugar and salt, stirring to dissolve sugar. Stir in heavy cream.  Churn according to manufacturer's directions.  In the last 10 minutes of churning, slowly add mini chocolate chips.  

Transfer mixture to a freezer save container.  Freeze until solid.   

** Alternatively, blend watermelon chunks until smooth and strain out the solids.

So I learned you could buy watermelon juice.  But I went with the liquefying the chunks and straining.

Some Gave All

Memorial Day is to honor the men and women that gave the ultimate sacrifice for our country.

Memorial Day started off as Decoration Day after the Civil War.  There is debate over whether the tradition was started in the north or the south. President Johnson signed a proclamation in 1966 naming Waterloo, NY as the birthplace of the holiday.  The Uniform Monday Holiday Act of 1968 moved the holiday from the traditional May 30th celebration to the fourth Monday of May.

Motivation Monday

I prefer walking over running mainly because my knees are in terrible shape already.  So I love seeing this on Pinterest this week.

I will be getting in a lot of walking when we have Relay for Life in a couple of weeks. Starting June 1st Jessica Smith is doing a challenge with Sparkpeople to walk at least 5 miles a week. I am planning on completing that challenge as her last couple I have failed to complete.

Ranch Pork Chops

I was looking through my cookbook for something to cook this week but everything I found needed to be grilled.  That doesn't work when the weather is predicting rain all weekend.  So where else do you go for a recipe? Pinterest of course.  I found this one from Picky Palate.  

6 pork chops
1 packet of dry ranch dressing
10 oz. can cream of chicken soup

Place pork chops, ranch dressing, and soup into a crock pot over high heat for 4 hours or low heat for 6 hours.  

The recipe has some amazing sounding mashed potatoes with it so click on the link.  I was a tad lazy and just used a packet of the Betty Crocker mix.  
I had the fiesta ranch dressing mix on hand so that is what I used.  These turned out amazing.  And is sot easy it could be thrown in before running out the door for work.

King of the Blues

B. B. King I woke up to the news that we had lost the King of the Blues last night.  While at 89 and knowing he had been put into hospice care weeks ago it was still a bit of shock or maybe that was the fact R texted me with the news 30 minutes before my alarm was set to go off.
B.B. was the undisputed king of the blues and until the fall was still touring at least 100 days a year.  He was rarely without his guitar named Lucille by his side.
B.B. was on my bucket list of artist I want to see in concert.  R & I have tried in recent years to find a way to hit one of his shows but couldn't get both of our schedules to get it in.

I know what will be playing in the background tomorrow while cleaning my house.

Lack of Sleep

I was talking to one of my grandmother's this afternoon.  She asked what had been happening and I told her and that I had not had much sleep in the last week.  Her immediate thought was because of the job situation.  I told her no it was from staying up reading.  She died out laughing but still made sure that it wasn't to distract myself.  I have picked up three good books from the library in the last week. And then I got on Pinterest to pass some time and below was in my feed.

So what have I been reading

**Split Second by David Baldacci. It is the first in the King and Maxwell series. I have read one of the later ones and decided it was way past time to go back and read where it started.  So now I need to work my way through the rest of the series in order.

** On Her Own by Wanda E. Brunstetter.  This is the second one her Brides of Webster County series.  This one is set in an Amish community in Missouri and a widowed woman finds a new love.  

**  Festive in Death by J. D. Robb.  This is the thirty-ninth in her In Death series.  I love this series.  It is interesting to see these characters evolve.

May Goals

I didn't bother to weigh in or take my measurements this month.  I was so terrible with eating and working out I don't think I want to know.  On the plus side my cloths are not getting tight and are still a little loose.  

May Goals

**  Hit they gym 3 days a week.

** Do 3 videos a week.

** Read 3 books.  My goals for the year is 50 books on Goodreads and I am way behind.

** Try one new recipe.

** Finish the last ornament from last year and the one from last month.

April Bombed

I totally bombed on my April goals.  I let myself get caught up in being miserable over the news that the company is closing our office at the end of the year.  I came home most nights and crashed especially during the two weeks I was training the  people from corporate who will be taking our jobs.  I am one of the lucky ones as my last day is scheduled for 12/31 so that gives me time to find the right job but it is still a scary feeling.  I started looking for two weeks ago.  Say some prayers the right thing comes along soon.

April Goals

** Hit the gym three days a week.

I hit it maybe once a week.

** Do three videos a week. 

I got in maybe two a week.  

**  Apply for at least one job a week. (more on this later)

I didn't start until 2 weeks ago and applied for a couple.

**  Pick one healthy recipe to try.  

This one I fully completed.
