Since one of my goals for the year is to get a better handle on my health my goal is for each months recipe to be a healthy one. I found this one on the Skinny Mom website. No I don't have kids but a couple workouts and other recipes have popped up in my Pinterest feed so I poked around on the site and found this recipe.
1 pound ground chicken breast
1 whole egg
1/2 c. Italian style breadcrumbs
2 cloves garlic, minced
1/2 c. red pepper, diced (about 1/2 medium size red pepper)
1/2 small onion, diced
1 tsp. Italian seasoning
3/4 c. Parmesan cheese, grated
3/4 c. low moisture, part skim shredded Mozzarella cheese
3/4 c. marinara sauce
fresh basil for garnish
Preheat oven to 350º.
In a large bowl, combine ground chicken, egg, bread crumbs, garlic, red pepper, onion, Italian seasoning and Parmesan cheese. Use clean hands to mix together until just combined. Try not to over mix.
Spray a regular size muffin tin lightly with nonstick cooking spray.
Use a 1/4 c. to evenly fill each muffin cup with the meat mixture. Press mixture down in to each cup.
Top each cup with 1 tbsp. marinara sauce.
Bake for 20 minutes. Remove from the oven.
Top each muffin with about a tablespoon of shredded mozzarella.
Return to the oven for 2-3 minutes or until cheese is melted.
Garnish each muffin with fresh basil.
They tasted great. I did have a few changes as I used the regular breadcrumbs I had on hand and didn't have enough Parmesan cheese. I chose the roasted garlic marinara sauce from Whole Foods. And I forgot the basil.
Another plus is they are great warmed up too.
