After being sick for over a week I woke up feeling better this morning and got in a workout. Okay two workouts as I started making up workouts from the Fit in 15 plan. It felt so good to sweat. Tomorrow night I am headed back to the gym.

I realized I have forgotten to post anything about Christmas or my Birthday. I didn't get many presents to open which is not unusual anymore. I got a book I wanted, bracelet, wristlet, Ole Miss serving plate and another champagne flute.
This was the coolest gift I got this year. A jacket is from when the Chicago Bears won the Super Bowl in 1985. The jacket still has the tags on it and amazingly enough it is in my size. The coolest part of all is that S gave it to me after finding it in the thrift store.
I decided on buying a Coach purse for my treat for paying off my student loans.

Since one of my goals for the year is to get a better handle on my health my goal is for each months recipe to be a healthy one. I found this one on the Skinny Mom website. No I don't have kids but a couple workouts and other recipes have popped up in my Pinterest feed so I poked around on the site and found this recipe.
1 pound ground chicken breast
1 whole egg
1/2 c. Italian style breadcrumbs
2 cloves garlic, minced
1/2 c. red pepper, diced (about 1/2 medium size red pepper)
1/2 small onion, diced
1 tsp. Italian seasoning
3/4 c. Parmesan cheese, grated
3/4 c. low moisture, part skim shredded Mozzarella cheese
3/4 c. marinara sauce
fresh basil for garnish
Preheat oven to 350º.
In a large bowl, combine ground chicken, egg, bread crumbs, garlic, red pepper, onion, Italian seasoning and Parmesan cheese. Use clean hands to mix together until just combined. Try not to over mix.
Spray a regular size muffin tin lightly with nonstick cooking spray.
Use a 1/4 c. to evenly fill each muffin cup with the meat mixture. Press mixture down in to each cup.
Top each cup with 1 tbsp. marinara sauce.
Bake for 20 minutes. Remove from the oven.
Top each muffin with about a tablespoon of shredded mozzarella.
Return to the oven for 2-3 minutes or until cheese is melted.
Garnish each muffin with fresh basil.
They tasted great. I did have a few changes as I used the regular breadcrumbs I had on hand and didn't have enough Parmesan cheese. I chose the roasted garlic marinara sauce from Whole Foods. And I forgot the basil.
Another plus is they are great warmed up too.

I am ready for the fresh start a new year brings with it. I hope this year does not pass quite as fast as the previous year but I doubt that really happens. Why is it that the year seems to fly so fast since becoming an adult? I started thinking about what I wanted my goals for 2015 would be at the beginning of December once I received my new planner.
** Make one Christmas ornament a month. I only managed to get three completely made this year.
** Replace one appliance. Yes I had this one last year but one a year is about all I can afford.
** Get my diploma framed. I think I need to get that done before I get around to finishing my second degree.
** Take better care of my health.
** Hit the gym three days a week.
** Complete the JessicaSmithTV Fit in 15 challenge.
** Try one new recipe.
** No spending on anything but essentials.
** Finish two cross stitch projects. I have a couple in progress I keep setting aside.

I am not sad to look at 2014 through a rear view mirror. It wasn't a great year or a bad year but I am glad to see it go.
** I hit the goal of taking a vacation and exceeding it. I got in two short trips. I headed to Natchez in the spring for a long weekend and got to meet my girl Christina. I also took a short trip with the family to New Orleans in the fall.
** I did upgrade one appliance. I finally got a microwave vent hood in May. I am still not sure what to do with all the extra kitchen counter space I gained by getting rid of the microwave I had.
** I worked on taking better care of myself. And the extra motivation I had to make that happen was finding out what was causing me some of the minor health issues I started having a couple years ago.
** Taking the other two trips cancelled any hopes I had of making it to an away game but I think it was worth it in the long run.
** Deep cleaning one room a month only happened once. But because of that I found a lot of stuff to donate.
I think I hit the most important goals for the year. And made a few strides towards others and will give me a place to start with in 2015.
