Pesto Potatoes

I have been looking for a new side dish to make.  I found the recipe for pesto potatoes on Pinterest.

5 to 6 medium russet potatoes
1 (10 oz) jar pesto
3/4 c. Parmesan cheese

Scrub the potatoes and cut into large cubes.  Put the potatoes in a large Ziploc bag and add the jar of pesto.  Shake until the potatoes are covered.  Pour onto a backing sheet and sprinkle with Parmesan cheese.  Bake at 450ยบ for 25 to 30 minutes.

These turned out amazing.  I might get creative and make my own pesto next time.

May Challenge

I was looking for a workout challenge to start for May.  I looked at the Tone It Up Girls bikini challenge but then I got an email from Jessica SmithTV about a 30 day challenge for May.  I have been doing a lot of Jessica's workout videos on YouTube lately so I went with hers.

Jessica has a variety of workouts.  I have managed to get through a total of two weeks of workouts that she lines out so doing a whole 30 days is going to be a challenge.  Anyone want to join me?

I can't believe we are so close to being done with four months of 2014.  I really wish the year would slow down just a little bit.

Sauteed Chicken Breasts with Pico de Gallo

I am trying to find some more healthy recipes to put into a rotation.  I went looking though my cookbook for items from Cooking Light magazine and found an easy one.  And it had a side dish listed with it.

1 c. chopped seeded tomato
1/3 c. chopped white onion
1 jalapeno pepper, finely chopped
2 1/2 tbsp. canola oil, divided
3/4 tsp. salt, divided
4 (6 oz) skinless, boneless chicken breast halves
1/4 tsp. freshly ground black pepper

Combine the first 3 ingredients, 2 tbsp. oil, and 1/4 tsp. salt.
Heat a large skillet over medium-high heat.  Add remaining 1 1/2 tsp. oil to pan; swirl to coat.  Sprinkle both sides of chicken with remaining 1/2 tsp. salt and pepper.  Add chicken to pan; saute 6 minutes on each side or until done.  Serve with pico de gallo.  

Included with the recipe in the magazine was a recipe for Cilantro Rice.

Cilantro Rice

2 c. hot cooked long grain white rice
1/4 c. chopped fresh cilantro
1 tsp. grated lime rind
1/2 tsp. ground cumin
1/4 tsp. salt

Combine the cooked rice with cilantro, lime, cumin and salt.

Both dishes tasted wonderful.  I would had a bit more spice to the pico de gallo in the future.

Opening Weekend

The opening of baseball season started out with a tournament for H.  He has moved up to coach pitch baseball this year.  I am totally lost on all the rules.  In the last two years I figured out what t-ball is all about and hope it doesn't take to long to catch up with the new rules.

This is the only good shot from Friday night.  These two ran up and down the hill most of the game.  We were facing into the sun to watch the game so getting a picture of the kids playing was not easy.

The kids are using catchers gear for the first time.  It was so cute seeing them walking around in the gear.  For one kid the leg guards were almost as long as his legs.

Two weeks ago I met Christina in Natchez for a girls weekend.  We had been talking about meeting up for a couple of months and tried first for a trip to Nashville but sadly that didn't work out.  Christina found a great girlfriends deal at the Natchez Grand Hotel for a two nights stay.  Spring is the perfect time to go because of the Spring Pilgrimage.  

Longwood is always beautiful.  

We did the afternoon tour after eating lunch at Fat Mama's.  It was nice to see a house I had not seen before.  

We saw this statue while walking around Saturday afternoon.

I was tempted to buy the Bourbon taffy in one of the shops.  

I couldn't resist getting a picture taken with the Scarlet O'Hara cut out. I think Christina thought I was crazy.  

It was a great two days to spend together and get to know each other better.  We never thought to get a single picture together though.

Five Minute Mousse

I found this recipe in an ad for Jello in a magazine during college.  I love chocolate mousse and fell in love with a real quick and easy recipe for it.  I make this several times a year.

Five Minute Mousse

1 package (4 serving) Jello chocolate pudding mix
1 1/2 c. milk 
Cool Whip

Beat the package of pudding mix with wire whisk into the milk.  Stir in two cups of thawed Cool Whip.  

I use the fat free, sugar free pudding mix along with skim milk and fat free cool whip.  
I have also used the white chocolate mix and it turns out amazing too.

April Goals

I hit all my goals for March.  It feels so good to have done that especially since I was out of town for a week on business.  Honestly I was pretty sure I wouldn't hit my goals because of that trip.  Now to just order the print I have been wanting.  I also started cleaning up my diet.  I have an out of control sweet tooth and started to limit myself to something sweet once a day instead of after lunch and dinner.  The payoff of all the hard work on both workouts and my diet is my pants have started getting looser.  They are not loose enough yet to go down a size but I will take it.

April Goals

** 3 cardio workouts a week.

** 2 strength workouts a week.

** 2 morning workouts a week.  

**  1 thing for myself a week.  

**  Study 3 hours a week at home.

If I hit all of my goals I get a new book.
