5 to 6 medium russet potatoes
1 (10 oz) jar pesto
3/4 c. Parmesan cheese
Scrub the potatoes and cut into large cubes. Put the potatoes in a large Ziploc bag and add the jar of pesto. Shake until the potatoes are covered. Pour onto a backing sheet and sprinkle with Parmesan cheese. Bake at 450º for 25 to 30 minutes.
These turned out amazing. I might get creative and make my own pesto next time.
