Zoo Lights

Saturday night S asked if I wanted to join them and some other friends for the Zoo Lights.  I decided it would be fun after the Rebels beat state.  I didn't drink that much whiskey during the game so I didn't feel like I would embarrass them.  It isn't easy to get a picture of these 4 clowns.  The below are the three best shots I got on my camera.  

The flash isn't working on my phone half the time anymore.  I took my camera and both H and G-man think they need to use it too.  

H had to take a picture of his bestie while we were waiting on dinner.

November ended up not going so well.  I didn't hit half my goals but oh well I can't dwell on that.  I did get half of my Christmas ornaments completed or rather the cross stitching done I still need to put them together.

November Goals

A new month means a fresh start.  I totally bombed out for my October goals.  I spent two weeks sick with a really nasty sinus infection.  The month started off great but tanked pretty fast.  I can't change that all I can do is not let it get to me.

November Goals

**  Complete the JessicaSmith TV 30 Fall fitness challenge.

** Start on making Christmas ornaments

** Get half of my Christmas shopping done before Thanksgiving.

My new pretty

I got a new little pretty tonight.  I was off yesterday and decided to load some new tunes to my old IPod to get me motivated to workout again after being sick.  It would not turn on or charge at all.  I can't complain it was at least 7 years old.  On my way home I picked up this cute blue one.  I don't need much to hold music just for the gym.  

Any suggestions for new music for my workouts?

Motivation Monday

I have been sick for two weeks.  I got a really nasty sinus infection that just didn't want to go away.  I finally gave in and went to the doctor last week for the miracle cocktail shot.  It still took until yesterday to start feeling close to myself again. I am looking forward to doing some light workouts this week.  I will admit I have been craving a good workout for a couple of days.  This is a good sign right?  It means that I have hit that turning point where workouts are concerned.

No I am still not talking about the fact Ole Miss beat Bama on Saturday.   Something almost as exciting happened this week.  I paid off my student loans.  It is so exciting though it does make me feel old too.   Since the amount for my student loans is in my monthly budget for the whole year I decided I get to blow the amount for the remaining two months on something fun for me.  Now it is just a matter of deciding what I want to spend it on.  I have it narrowed it down to three things.





I am determined that the only thing that goes for the house is a new TV for my living room.  Yes it was so tempting to add a Kitchenaid mixer to the list but I don't have anywhere for it to be stored.
It is so hard to decide which one I want more.  But I am waiting until November until I go to purchase what I decide on.

October Goals

Yes I am late coming up with my goals for the month of October.  September went okay.  I didn't hit the goal of eating fruit everyday I lost control of that one once I went to New Orleans at the middle of the month.  And I didn't hit the gym three days of week once I dropped the Jeep off for repairs because I decided not to go back for the gym card I left on the key chain.  But I did do three videos a week to replace those workouts.  

October Goals

**  Hit the gym 3 days a week.

**  Three morning workouts a week.

**  Eat more fruits and vegetables.

**  Three arm workouts a week.  

** Finish two cross stitch projects.

It Isn't A Dream

I haven't stopped smiling since the time clock on the Ole Miss and Bama game hit 0:00 and the final score on the board was 23-17.  Yes my Rebels beat the topped ranked team in the nation.  
I did have to check and make sure it wasn't a dream this morning.  Thanks to the Commercial Appeal for confirming it.

Not only did we beat Bama but we hosted ESPN Game day for the first time ever.  Don't the guys look cute in their bow ties?  But why didn't someone tell Lee that seersucker is for summer and not to wear it in October (1).

The fans got really excited and both goal posts came down and went on a tour of The Grove and The Square.  There is a video out there of someone surfing on a piece through The Grove (2).

There they go to The Square.  I worked that that Abner's they are going by at four corners.  And across the street is the Chevron station with the famous chicken on the stick (3).

We are truly blessed that we have such an amazing AD with a sense of humor now.   He is also asking those who helped take them down donate some to help with the fines and replacement.  

I don't know about the rest of the Rebel family but I was on pins and needles waiting on the standings to come out today.  Well worth the wait we are ranked #3 in the nation.

One of my cousins is getting married in November.  He is a Bama alum and didn't look at the schedule when the date was picked because they are getting married on the day Bama plays LSU.  Thankfully we play a small school team that probably won't be on TV.  He will be in a world of trouble if the ceremony is scheduled during game time.
I am trying to figure out something to wear to the wedding and have decided to buy something new instead of pushing myself to be able to shop in my own closet (yes I probably should be pushing).  I have decided to finally give Modcloth a try.  Has anyone ordered from them?

A few I like but can't decide on.

This one comes in black too and would make a great little black dress.

Soccer Season

I got a text from S Saturday morning letting me know G-man had his first soccer game.

G-man and his pal N being told something by the coach. Probably to watch the ball and play the game. They were more interested in goofing off together.  

They both play when they get separated. The coaches forgot that at first Saturday morning.  
I am not gonna lie they are so cute at this age playing. They get confused as to which is their goal and the fact only the goalie touches the ball.  

The big brothers chilling with snow comes.  H said he was thirsty so we went for a drink and he saw the snow cone machine.

A Mini Vacation

Last week I met up with my grandmother, parents and brother in New Orleans for a couple of days.  Out main goal was to see the World War II museum. 

We stayed at The Blake Hotel.  It was perfect for what we needed in walking distance and for catching the streetcar.  Right after we arrived someone came along and posted this no parking sign due to filming.  The guy in the background is my little brother.  

I realized when I got home I only took two pictures.  I was to busy reading the map to get around and enjoying what I was seeing.  At least that is what I am saying so I don't feel like I was being lazy by not pulling out my camera or phone. 

I got one picture at the museum (there are signs that say not to take them).  This is a 1942 Harley Davidson.

Football Love

I come from a family full of football fans.  The rest of my family either cheers for Alabama or Auburn.   I decided to not piss anyone off and go my own way.

This picture has shown up a couple times in my feed on Pinterest and it makes me smile every time.

Because it makes me think of one of my grandmothers.  Nanny is a Bama alum and at age 86 she still cheers hard every Saturday for them.  She keeps a printout from the Tuscaloosa News with the players names and numbers.  She thankfully does not have the personality of Maxine.  I hope I live as long and am still able to cheer for my team and still understand the ever changing NCAA rules.

Chipotle Chicken Meatball Tacos

I was looking for something that would be fun to eat during the Ole Miss game Thursday night.  But I was so exhausted from work I didn't make them until Sunday night.  They were great for dinner and would be great for a tailgate too.  

2 think slices white sandwich bread, torn into small pieces
1 large egg
1 white onion, finely chopped
2 cloves garlic, minced
1/4 c. chopped fresh cilantro
3/4 pound ground chicken
3 tbsp. extra virgin olive oil
1 jalapeño pepper, seeded and chopped
1 chipotle chile pepper in adobo sauce, seeded and chopped
1 (14 oz) can diced fire roasted tomatoes
1/4 tsp. dried thyme
1/4 tsp. ground cinnamon
2 bay leaves
Hard taco shells and assorted toppings, for serving.

Combine the bread and egg in a large bowl; add 1 tbsp water and mash with a potato masher or fork to make a paste.  Add half each of the onion and garlic, then add the cilantro, chicken, 1 tsp salt and 1/4 tsp. pepper; mix with hands until just combined.  Brush a large baking sheet with 1 tbsp. olive oil.  
Meanwhile, position a rack in the upper third of the oven and p reheat to 475º.  Combine the remaining onion and garlic, the jalapeño, chipotle, tomatoes, thyme and cinnamon in a blender; pulse until smooth.  Heat 2 tbsp. olive oil in a dutch oven over medium-high heat.  Pour in the tomato puree, then add the bay leaves and cook until the sauce thickens, about 6 minutes.  Stir in 1 1 /2 cups water, scraping up the browned bits front he bottom of the pot.  Reduce the heat to low and simmer, stirring occasionally, 10 or more minutes; season with salt.
Bake the meatballs until they just start to brown, about 8 minutes.  Transfer to the sauce and gently simmer, spooning the safe over the meatballs, until cooked through, about 7 minutes.  (Add a few tablespoons of water if the sauce gets to thick.)  Remove the bay leaves.  Cut the meatballs in half and serve in taco shells with assorted toppings.

These turned out great!  I used wheat bread though.

Spiced Pecans

I was looking for something to snack on besides chips during the Ole Miss game Thursday night.  And found this pecan recipe from Southern Living.

Spiced Pecans

1 1/2 c. apple juice
1 1/2 c. pecan halves
3 tbsp. sugar
1 tsp. apple pie spice
1/8 tsp. salt
1/8 tsp ground red pepper.

Preheat oven to 350º.  Pour 1 1/2 cups apple juice eover 1 1/2 cups pecan halves in a small bowl.  Let stand 15 minutes; drain.  Stir together sugar, apple pie spice, salt and pepper in a medium bowl; add pecans, tossing to coat.  Spread in a single layer in a lightly greased, aluminum foil lined 15x10 inch pan.  Bake 15 minutes or until lightly toasted stirring once.  Cool in pan on a wire rack 20 minutes; separate pecans with a fork.

No cook Peach Ice Cream

I was wondering the Farmer's Market Saturday morning and the peaches really caught my attention.  So I bought some and came home to find a recipe to put them to use.  I found this no cook ice cream recipe from Southern Living.

1 (14 oz) can sweetened condensed milk
1 (5 oz) can evaporated milk
1 1/4 c milk
4 peeled peaches 
2 tbsp. sugar
1/4 c. lemon juice
1/4 tsp. salt
3/4 c. peach nectar

Process the peaches, sugar, lemon juice and salt in a blender or food processor until smooth.  Stir into milk mixture along with 3/4 c. peach nectar.  
Freeze according to ice cream maker instructions.

I couldn't find any peach nectar so I substituted in some peach schnapps.

Graceland Too

In Holly Springs there is a place called Greaceland Too.  It was run by a man, Paul Macleod, who was obsessed with all things Elvis.  Paul died in July at the age of 70.   Paul kept anything he found with Elvis on it and opened his home up to tours 24 hours a day.  It was a favorite destination for Ole Miss students in the middle of the night.  S went so many times she earned her lifetime membership card and didn't have to pay to tour anymore.  Two weeks ago they opened the home up to tours during a memorial weekend so we all went down which was only my second visit.  

Here is a little taste of what you might see when Paul was still alive.

Paul always took a group picture of his visitors and the first time I went he was able to find one of S's last ones.

Another tradition was to take a picture in a leather jacket.

I didn't realize until we were inside for the tour that there was no air conditioning.  So putting on the jacket made me sweat even more.

Fresh Corn Cakes with Cilantro Cream

I was looking for a new side dish to try.  I found this one from Diabetic Living summer issue.

Fresh Corn Cakes with Cilantro Cream

1/2 c. whole wheat panko
1/2 c. cornmeal
1/4 tsp. salt
1/4 c. fat free milk
2 eggs, lightly beaten
2 egg white, lightly beaten
2 c. fresh corn kernels (4 ears)
1/2 c. grated carrot (1 medium)
1/2 c. finely chopped green sweet pepper (1 small)
Nonstick cooking spray
2 tsp. olive oil

In a large bowl stir to ether panko, cornmeal and salt.  Whisky in milk, eggs, and egg whites until combined.  Stir in corn, carrot and sweet pepper.
Coat a very large nonstick skillet with cooing spray; brush with 1 tsp. of the oil.  Heat over medium-high heat.  Using a 1/3 c. measure, add six portions of the corn mixture to the hot skillet, spacing evenly.  Cook about 6 minutes or until golden brown, turning once.  Transfer cooked corn cakes to a warm serving plate.  Repeat with the remaining 1 tsp. oil and the remaining corn mixture.  
Serve with Cilantro cream

Cilantro Cream

3/4 c. finely snipped fresh cilantro leaves
2 tbsp. thinly sliced green onion
4 tsp lime juice
2 tsp. fat free milk
1 (6 oz) carton plain low fat Greek yogurt

In a small bowl whisk together cilantro, green onion, lime juice and milk.  Whisky in Greek yogurt.
makes 1 cup.

The second batch got a little brown and didn't stay together very well either.   These turned out okay.  I think they need some spice added to them.  And the cilantro cream was not good at all.  
Sadly this is the part I dread finding out that the recipe is not good warmed back up.

Old Kentucky Bourbon Marinade

I found this recipe in an issue of Southern Living in the last year.  I had been trying to find some reason to use it and found it this week.  Instead of using it as a marinade I added to my crock pot with a pork tenderloin.

Old Kentucky Bourbon Marinade

3/4 c soy sauce
1/2 c. Bourbon
1/3 c. canola or corn oil
1/4 c. Worcestershire sauce
3 tbsp. coarsely ground black pepper
2 tbsp. light brown sugar
1 tbsp. spicy brown mustard
4 garlic cloves, minced
1 tsp. orotund white pepper
1/2 tsp. ground ginger

Whisky together all ingredients and 1/3 c. water in a bowl.  

Makes about 2 cups.

I will admit I didn't realize how little bourbon I had in the house and only had half of what the recipe calls for and substituted the remaining with whiskey.  I also didn't realize I didn't have ginger either but it still tasted good.

Slumber Party

I finally had H and G-man over for a slumber party.  We had to cancel the first one that was planned due to a family emergency.    According to S they woke up Saturday morning ready to come to my house then and for the record I was not up at 7 AM.

I picked them up about 5.  The first order of business was to run through the sprinklers.  

H had a blast.  

G-man thought the water was to cold.  

After drying off G-man took over the camera duties.  Though this is the only picture not of the ground or the door. Not the most flattering angle.

We came in to make our own pizzas.  

Then we played with bubbles.  

I found a 26 piece set and a Cars set.  

They got out the play do too.

G-man pulled out my decorative guitar to sing to us while watching Willie Wonka & the Chocolate Factory.

They took over the living room.  I am not sure why their bags and clothes never made it to their room.

I made cinnamon rolls for breakfast Sunday morning.  I was plating them for the boys and turned around to find G-man drinking out of the milk carton.  

It was a good night.  I am not going to lie all their energy was exhausting.  But Belle and I will do it again.

Key Lime Pie Ice Cream

I pulled the recipe out of Southern Living in 2011.  I think it is about time I tried it.

1/2 c. sugar
2 tbsp. cornstarch
1/8 tsp. salt
2 c. milk
1 c. half and half
1 egg yolk
1 tsp. key lime zest
1/3 c. key lime juice
1/2 c. coarsely chopped graham crackers

Whisk together first 3 ingredients in a large heavy saucepan.  Gradually which in milk and half and half.  Cook over medium high heat, stirring constantly, 8 to 10 minutes or until mixture thickens slightly.  Remove from the heat.
Whisk egg yolk until slightly thickened.  Gradually whisk about 1 cream mixture into yolk.  Add yolk mixture to the remaining cream mixture., whisking constantly.  Whisk in vanilla.
our mixture through a fine wire-mesh strainer into a bowel, discarding solids.  Cool 1 hour stirring occasionally.  Place plastic wrap directly on cream mixture; chill 8 to 24 hours.  
Pour mixture into freezer container of a 1 1/2 quart electric mice cream maker and freeze according to manufacturer's instructions. 
Stir in 1 tsp. key lime zest, 1/3 c. key lime juice and 1/2 c. coarsely crushed graham crackers halfway through freezing.
 Let stand at room temperature 5 to 10 minutes before serving.  

The worst part about this recipe is that it has to sit overnight before freezing.  But it was worth the wait.

I can't believe half the year is over already.  I made about half of my goals for the month.  I really slacked the last week in half of the month.  I was feeling terrible by Sunday from not working out or eating well which was a big wake up call.  I did get one cross stitch project finished and came close to  finishing a second one.

Chicken Sausage and Egg Breakfast Cups

I have never been a big breakfast eater but recently have been wanting it most mornings. I have had to stop on the way to work to pick up something. I went looking for something on Pinterest for breakfast items that will freeze well. I found a couple of them but decided to give this one a try first. Following the link from the pin I landed on Organize Yourself Skinny.  

1 pound parsley and cheese chicken sausage or a kind you prefer
12 eggs
1/4 c. milk
salt and pepper to taste (optional)
1/2 c. shredded cheddar 
Cooking spray

Remove chicken sausage from casings.  In a medium pan, cook sausage until no longer pink.  As they cook break sausage up with a spatula into small to medium size pieces.  If needed, drain slightly, and then dived sausage crumbles among 12 muffins tins sprayed with cooking spray.  
In a large bowl, whisk together eggs and milk.  Add a little salt and pepper if using.  Divide the egg mixture evenly over the chicken sausage in the 12 muffin cups.  Sprinkle with cheese evenly over muffin cups.
Carefully walk to place the muffin pan into the oven and cook for 20-30 minutes or until cooked completely.  Serve immediately or freeze.

Once they are completely cool they can be wrapped in plastic wrap to be frozen.  When ready warm them up minus the wrap for 1 1/2 - 2 minutes.

I could only find Johnsville chicken sausage which I couldn't get out of the casing.  I decided on the Chipotle Monterery Jack sausage.  But went with it anyways.  I also didn't see the temperature to use in the recipe so I went with 350º for 25 minutes.

I had them for lunch a couple times this week and they turned out good.

Coffe Kahlua Ice Cream

I was looking for a new ice cream recipe to try during Memorial Day weekend.  I found one that was coffee and Kahlua that I had cut out from Mississippi magazine and decided that would be perfect.  Sadly I didn't read it all completely because it was for a gallon of ice cream and I couldn't figure out how to take it down to fit into my 1 1/2 quart machine.  So I spent the last week searching for another coffee recipe and found one in of all places the manual for my machine.

Coffee Kahlua Ice Cream

1 c. milk, well chilled
3/4 c. granulated sugar
2-3 tbsp. instant espresso or coffee, to taste
2 c. heavy cream, well chilled
1 tsp. pure vanilla extract

In a medium bowl, use a hand mixer or whisk to combine the milk, granulated sugar, and espresso powder until the sugar and espresso are dissolved, about 1-2 minutes on low speed.  Stir in the heavy cream and vanilla.  Turn on the machine, pour the mixture into freezer bowl and let mix until thickened, about 25-30 minutes.  

I substituted the Kahlua for the vanilla extract.

June Goals

I did well in May with my goals.  I say well because I never made it inside of the gym the whole month.  I really need to work on that this month.  I really don't have much of an excuse since classes ended on the 9th.    I managed to pull out a B in my class.  
I learned a lot by completing the Jessica Smith 30 days in May challenge.  I learned that yoga makes me sleepy and that isn't good when one of the workouts includes weights.  I also learned how uncoordinated I really am doing the kick boxing workout.  

June Goals

** Two morning workouts a week.

**  Two days in the gym a week.

** Two videos a week.

** Try two new recipes

**  Finish one cross stitch project

** Complete the 30 day thigh challenge.

Summer plans

No it isn't really summer yet but since classes are over for the semester I have decided summer has started.  I am not taking any classes this summer because I need the break and so does my pocketbook.

I have a few things I want to get accomplished.

**  Work on bringing down my stress level.

**  Save some money towards weekend trips in the fall.

** Finish the present for my aunt.  I am close to halfway done so far.  

** Work on cleaning out my office and redecorating it.  

**  Have a sleepover with the nephews.

I already got a day behind on the fitness challenge.  The plan is to get caught up tonight.  But I am not going to lie I am still sore from the day 3 workout.  But I know it will be good in the long run when I can fit back into my shorts at the end of the month.

Pesto Potatoes

I have been looking for a new side dish to make.  I found the recipe for pesto potatoes on Pinterest.

5 to 6 medium russet potatoes
1 (10 oz) jar pesto
3/4 c. Parmesan cheese

Scrub the potatoes and cut into large cubes.  Put the potatoes in a large Ziploc bag and add the jar of pesto.  Shake until the potatoes are covered.  Pour onto a backing sheet and sprinkle with Parmesan cheese.  Bake at 450º for 25 to 30 minutes.

These turned out amazing.  I might get creative and make my own pesto next time.

May Challenge

I was looking for a workout challenge to start for May.  I looked at the Tone It Up Girls bikini challenge but then I got an email from Jessica SmithTV about a 30 day challenge for May.  I have been doing a lot of Jessica's workout videos on YouTube lately so I went with hers.

Jessica has a variety of workouts.  I have managed to get through a total of two weeks of workouts that she lines out so doing a whole 30 days is going to be a challenge.  Anyone want to join me?

Sauteed Chicken Breasts with Pico de Gallo

I am trying to find some more healthy recipes to put into a rotation.  I went looking though my cookbook for items from Cooking Light magazine and found an easy one.  And it had a side dish listed with it.

1 c. chopped seeded tomato
1/3 c. chopped white onion
1 jalapeno pepper, finely chopped
2 1/2 tbsp. canola oil, divided
3/4 tsp. salt, divided
4 (6 oz) skinless, boneless chicken breast halves
1/4 tsp. freshly ground black pepper

Combine the first 3 ingredients, 2 tbsp. oil, and 1/4 tsp. salt.
Heat a large skillet over medium-high heat.  Add remaining 1 1/2 tsp. oil to pan; swirl to coat.  Sprinkle both sides of chicken with remaining 1/2 tsp. salt and pepper.  Add chicken to pan; saute 6 minutes on each side or until done.  Serve with pico de gallo.  

Included with the recipe in the magazine was a recipe for Cilantro Rice.

Cilantro Rice

2 c. hot cooked long grain white rice
1/4 c. chopped fresh cilantro
1 tsp. grated lime rind
1/2 tsp. ground cumin
1/4 tsp. salt

Combine the cooked rice with cilantro, lime, cumin and salt.

Both dishes tasted wonderful.  I would had a bit more spice to the pico de gallo in the future.

Opening Weekend

The opening of baseball season started out with a tournament for H.  He has moved up to coach pitch baseball this year.  I am totally lost on all the rules.  In the last two years I figured out what t-ball is all about and hope it doesn't take to long to catch up with the new rules.

H up to bat.  He is a leftie and there was a debate and switch around about whether he bats left or right.

This is the only good shot from Friday night.  These two ran up and down the hill most of the game.  We were facing into the sun to watch the game so getting a picture of the kids playing was not easy.

The kids are using catchers gear for the first time.  It was so cute seeing them walking around in the gear.  For one kid the leg guards were almost as long as his legs.
