Peaunutty Hot Cocoa Mix

I was working on cleaning out my recipe box and found a this recipe from Nestle.  I am not sure where I found it or even how long I have had it around.

Peanutty Hot Cocoa Mix

1 c. dry instant nonfat dry milk
2/3 c. Nestle toll house peanut butter & milk chocolate morsels, coarsely chopped
1/3 c. granulated sugar
1/4 c. baking cocoa
1/4 c. powdered coffee creamer
pinch of salt

Place all the ingredients in a medium bowl.  Whisk until evenly blended.  Store in a tightly covered container at room temperature until ready to use or package.  
Makes about 2 cups of mix.

Spoon 4 tbsp. of cocoa mix into mug.  Add 1 cup boiling water: stir well.

I couldn't find the peanut butter & chocolate chip mix so I grabbed a bag of Reece's peanut chips and one of semi sweet chips.  It turned out wonderful.  I might have to take some to work to have everyday instead of always having the instant packets.

Chicken Creole with Chile Cream Sauce

I have not cooked a lot lately.  For one nothing has been very appealing lately.  I finally gave in and pulled out a recipe I have tried from the past.  I found it years ago on the Campbell's website.

4 boneless chicken breast halves
2 tsp. creole or Cajun seasoning
1 tbsp. olive oil
1 can cream of chicken soup
1/2 c. water
1 can (4 oz) chopped green chiles
1 tsp. lime juice
1/4 c. sour cream
hot cooked rice

Season chicken with creole seasoning.
Heat oil in skillet.  Add chicken and cook until browned.
Add soup, water, chiles, and lime juice.  Heat to a boil.  Cook over low heat 5 minutes or until done.  
Stir in sour cream and heat through.  Serve over rice.

When I didn't have rice around the house I have put it over pasta.

A Hodge Podge

** Pinterest has changed it so only registered business or blogs seem to be able to load pins to their websites.  Either that or I can't figure out the changes.  Anyone know how to make it work?

**  I am happy to see Jonathan Rhys Meyers back on my TV.  Dracula might get interesting after all.

**  Is anyone else watching Reign on the CW?  I started it and have really enjoyed it the show so far.

** I hate that the girls weekend had to be canceled. I was so excited for a couple of days in Nashville.  

** R got me addicted to another game. Candy Mania.  Does anyone else play this game?

**  I could deal without the Christmas commercials already being on TV and the radio.

November Goals

I am so happy to see a new month.  Last month ended up being a total bust.  Okay not quite the whole month I did well for the first week and a half.  The only goal I accomplished was taking some time for myself.  And that did feel great!!!  But I need to do better about working out and taking care of my health.

November Goals

**  Hit the gym 3 days

**  Workout two mornings a week

**  Complete the 30 day Squat challenge again.

** Continue to take some time for myself

I think leaving it at four goals this month will make it easier to complete them.  Plus I have a project due this month for my class.
