Weekend recap

I hope everyone had a wonderful Easter.  I spent mine with S and family.  It is hard to go to visit the family and get back so late on a Sunday.

I went down to S's house and we dyed eggs with the boys.  I almost forgot about such and she texted me around 2.  I have been so busy with class I have not given much thought to the holiday.

And the finished product.  S picked up a kit to make them look like baby chics.  We only did one for each boy as the fact glue wasn't in the kit was missed and we could only find super glue.  

You can hardly tell there are eyes on the one G is touching.  I promise I put them on there.

I spent Friday night with MB and her girls having a girls night out.  We went to see The Croods which was a really cute movie.  And the weekend was capped off by eating lunch at S's parents.  I ate way to much food this weekend.

I got hooked on The Young and the Restless when I was in the fifth grade by a baby-sitter.  For years I would record it on the VCR during the school year so that I could watch it while doing homework.  And then I became an adult and would watch it while cooking dinner, that is until my VCR died.  So Yes one of the best parts of getting a DVR last year was getting to record it again and always watching it instead of when I remembered it was on Soap net.  Yes I am a goof ball and love to know what is going on in Genoa City, especially what Victor Newman and Jack Abbott are fighting about now.    In the last two weeks at the beginning of each episode key characters have been introducing the episode with a spotlight on their characters.   My favorite have to be Eric Braeden's on Victor Newman

And Joshua Morrow's Nick Newman

Though the one I can't wait to see is Jeanne Cooper's on Katherine Chancellor.  Jeanne has been with the show since the very beginning.  I have always been dazzled by the jewels she wears on the show.

The Summons

I finally got around to checking yesterday's mail this afternoon. And I found my first ever jury summons. Last year five people in my department at work got called and we only have around thirty people in it. I get to be the first this year and I am sure our managers and director will hope I am the only one.
This will be my first time going to the courthouse for anything other than paying for my tags or getting a driver's license. I know everyone groans about getting them and trust me I did but I see it as the price that has to be paid for getting a voice in who runs this great nation. That being said I do find the idea of sitting on a jury interesting unless I get sequestered. When that thought hit me I began to worry about what would I do about Belle, getting bills paid and yard work done if that happened to me. Oh the joys of being single. With all the reading I have to do for my class I will have something to keep me busy while I sit and wait at least.
Has anyone else been on a jury?

Random Musings

**  I started taking a melatonin supplement a couple weeks ago.  Within an hour of taking it I can barely keep my eyes open.  That might be the pill or it might be mental thing.

** I am so excited it is Spring Break.  Though my plans aren't going the way I wanted.  I had planned to spend more time in the gym but instead my sinuses are giving me hell.  

** I was watching The Cosby Show tonight and figured out how I will be spending my weekend.  Watching a Golden Girls Marathon on TVLand.

**  I am really nervous about writing my first paper in years for class next week.  I am not sure I really remember how to write one.  

**  The only good thing about the time change is the days are longer.  

**  I am trying to decide if I am going to take classes this summer or take the time off.

**  I logged into my Google Reader tonight and there was a message that Google is going to retire the reader in July.  Any suggestions of another reader to use?

Cheddar Chicken and Potatoes

I have been wanting to get back into the kitchen for a couple of weeks but was uninspired.  I sat down Friday night and found a couple of good recipes.  And yes I picked out the easiest one I found.  I pulled this recipe from an old Kraft Food & Family magazine.  Man I sure miss that magazine but I can't bring myself to pay for what is an advertisement for their products.

4 slices of bacon
4 small boneless, skinless chicken breasts halves (1 pound)
1 lb. bag frozen potatoes with peppers & onions, thawed
4 oz. shredded sharp cheddar cheese

Cook bacon in large skillet on medium heat 5 minutes or until crisp.  Remove bacon from skillet to paper towel; discard drippings in skillet.
Add chicken to skillet; cook 5 minutes on each side or until done.  Remove chicken from skillet; cover to keep warm.  Crumble bacon.  Add to skillet with potatoes; cook and stir 5 minutes or until heated through.  

Place chicken over potatoes; top with cheese.  

Cover; cook 2 minutes or until cheese is melted.

It turned out really yummy.  I will be keeping this one around.

Grilled Chocolate and Heath Bar Quesadillas

I spent Friday night looking through cookbooks to find a new recipe to try.  Aren't y'all jealous of my exciting life?  I found a couple to try and narrowed it down to a dinner and a dessert.  I couldn't wait until today to try the dessert recipe.  I was really wanting some chocolate last night.

Grilled Chocolate and Heath Bar Quesadillas

Eight 8 inch flour tortillas
1/2 c. milk chocolate chips
1/2 c. chopped heath bar
melted butter, for brushing

Arrange the tortillas on a clean work surface.  Sprinkle four of the tortillas with 2 tbsp. each of milk chocolate chips and chopped Heath bar.  

Top with the remaining tortillas.  Brush the tops and bottoms of the tortillas with the melted butter.  
Preheat the grill to medium -high heat and brush the grate with oil or spray with non-stick cooking spray.  Place the quesadillas on the grill.  Close the cover and cook until the chocolate is melted and the tortillas are golden brown.  1 to 1 1/2 minutes per side.

I didn't go out and use the grill as Friday and Saturday there were snow flurries on and off.  I omitted the butter and just baked the quesadilla in the oven at 350ยบ for 10 minutes flipping it once.  I loved it and can't wait to try this on the grill this summer.

March Goals

I am not going to lie I bombed at my goals for last month.  Well at least at the biggest one, keeping up a fitness routine.  I did buy new sneakers and work on cutting back on the snooze button habit.     I really never took into account how much of my time outside of work would be taken up with all the reading for my class this semester.    I think I might have a handle on it now though.  So no prize for me this month.

March Goals

** Get back in the gym with 4 cardio and 2 strength workouts a week.  

**  Continue to cut back on the snooze button.  This will help with getting in workouts by giving me time to get one in a morning or two a week.

** Learn more about my new MacBook. 

**  Craft a hour a week.  

** Make it through writing my first paper in years.

If I hit my goals for March I am going to get a new ITunes gift card for some new tunes.
