Multiples - Laundry Rooms

I just have a laundry closet and dream of having a laundry room again.  I got spoiled by the laundry room in my first apartment. I also have loved seeing ideas of better organization for a laundry closet.  I spotted the washer and dryer set I own in a couple pins.

Mini Deep Dish Pizzas

I had a can of Grands biscuits I needed to use before they expired.  I was going to make mini pizzas with them for dinner last night.  But then I got the bright idea to make mini deep dish pizzas.  So I pulled a few more things out of the fridge I had on hand.



Mini Deep Dish Pizzas

1 can Grands biscuits (5)
salsa
ranch dressing
chopped chicken


Separate the biscuits into two halves and place in a muffin tin pushing up the sides.



While they are baking for 8 minutes mix together the salsa and ranch dressing.  Also chop up the chicken.  

What I didn't expect was that they would puff up so  much.  So I only had a few to put together and finish baking.


I did bake the rest of them for breakfast this morning.  


They might not have turned out exactly how I thought but they sure tasted good.

Multiples XIII - Closets

I have a huge things towards organizations and am always looking for new ideas. I tend to wear the same things every week because they are the first things I see and/or think of so finding ideas of better organization in my closet have been great. And okay some of them are dreams too. No, I have not done anything towards using any yet but this years goal is to add some new orgainzation around the house.

Award Season

With all the award shows happening on TV recently it seems appropriate to write about the one I received recently.  I think I also received this back in the fall and forgot to write about it (sorry if that is the case to the person who gave it to  me).

I received the award from Lauren over at On A Lighter Note....  If you haven't checked out Lauren's blog you really need too.

Random facts

1.  I have spent my day off watching Crossing Jordon episodes on Netflix.
2.  I wanted to be a lawyer when I was a kid.  
3.  I received my acceptance letter to Auburn on my father's birthday.  A hard pill for that Bama fan to swallow.
4.  I am so over learning about the French & Indian War.  Good thing we are moving on after this week in class. 
5.  I have worn glasses since I was ten.  
6.  I hate bananas.  That goes for the smell and taste.
7.  I was scared of the vacuum when I was a kid.
8.  I have not painted my nails anything but clear in at least 10 years.
9.  I love the smell in the air after it has rained.  
10.  My DVR has not been this caught up since I got one.
11.  Coming up with eleven facts is really hard.

My big what if would be if I had joined the Air Force.

Anything with cheese.

Do I have to pick just one.  It all depends on my mood.  But any Lynyrd Skynyrd will fit that bill.  

4.  What is the furthest place you have ever traveled?
Los Angeles

5.  If you had money to splurge on one item you really wanted what would that item be?
Well I would say a Macbook, but I did that last weekend out of a need.  So I will go with a new oven.  

6.  Have you ever had to stay in the hospital for more than one night?
No I have been lucky.  

7. Who would play you in a movie about your life?
It would have to be someone southern but as to who I can't be sure.

8.  If there was a soundtrack for you life, who'd be on it?
Eric Clapton, Lynyrd Skynyrd, The Rolling Stones, Alabama, Faith Hill

9. What's the most embarrassing thing you've ever done (or had done to you) in public?
Tripping up the union steps

10. If you had to move to another city today, where would you want to go?
Wow! That would be a tough choice.  But the place I feel most at home is Oxford.

11. Name one goal you want to accomplish this year?
Upgrade at least one kitchen appliance.

Jalapeno Cheddar Crackers

This was the best sounding recipe I found in Ina Garten's Foolproof cookbook.






There are quite a few great recipes and lots of wonderful pictures in the cookbook.  I would love to make these but my food processor is a little 3 cup one and not big enough.   But when I do or maybe I will just have to use Daddy's when I am visiting.


Jalapeno Cheddar Crackers

2 c. all-purpose flour
1 tsp. kosher salt
1/8 tsp. baking powder
14 tbsp. (1 3/4) cold unsalted butter, 1/2 inch diced
5 oz. extra sharp white cheddar, grated
1 tbsp. minced seeded jalapeno pepper 
1/4 tsp. chipotle chili powder
3 tbsp. ice water
1 egg beaten with 1 tbsp. milk, for egg wash
Fleur de sel or sea salt


Place the flour, kosher salt, and baking powder in a food processor fitted with the steel blade and pulse to mix.  Add the butter and pulse until the mixture resembles coarse meal.  Add the cheddar, jalapeno, and chipotle chili powder and pulse again.  With the food processor running, add the ice water all at once.  Continue pulsing until the mixture begins to form a ball.  Dump the dough onto a floured board and roll it into a 14 inch log.  Wrap in plastic, refrigerate for at least 1 hour.  
When ready to bake, preheat the oven to 400 degrees.  Line a sheet pan with parchment paper.
Cut the dough in 3/8 inch thick slices.  Place the crackers on the prepared sheet pan, brush with the egg wash, and sprinkle with the fleur de sel.  Bake for 12 to 15 minutes, until golden brown. Serve slightly warm or at room temperature.

Amelia Bedelia

I saw over the weekend a story about Amelia Bedelia turning 50. Does anyone else remember these books? I loved reading them in the first and second grade.

Amelia going camping was my favorite one.  I even tried to convince my parents we needed to go camping.  Good thing I had the Girl Scouts when I got older.  Now I don't know that I could handle camping outside of a cabin with a bathroom.  I do have my girlie moments and not having access to a bathroom is big one now.

Places I Miss

Since S & I went to Oxford a couple weeks back for a ZTA alum meeting I have been missing a few places a lot.  Oxford has grown up a great deal since we were down there in school and I have to admit I hope it stops soon as it could start to lose some of that small town charm with all the chains moving into town.






The Gin
I couldn't find any pictures of the bar except from while it was burning down. So sad that the current students will miss out on penny pitcher nights, dancing on the tables, and dollar import night. This was also the bar where you could drink under age and it got them into trouble multiple times.





Who couldn't use a drive through beer store? Oxford doesn't sell cold beer so this was the place to go in the cold months to get beer. Now it is a donut shop and still has the drive through.






Downtown Grill

The Grill closed last spring and a new restaurant is there now.  I loved the food at The Grill but my favorite part was the enclosed balcony.  A perfect spot to sit enjoying a drink and the beautiful way Oxford Square is decorated for Christmas.  The new restaurant opened back up the balcony which is just weird looking.

My old desktop died last night.  Not what I needed.  I broke down and got the Macbook I had been dreaming about for over a year.  Though buying it because I had too sure wasn't was fun as because I could.

February Goals

Why does the year always seem to go by faster now that I am an adult? A month into 2013 and so far I am not impressed with the year yet. I did hit my goals for January. Not to mention losing 4 1/2 pounds. So I went and picked out a new book over the weekend. How did everyone else do with their goals?


February Goals

** keep up with my workouts. I am going to shoot for four cardio and two strength workouts a week again.


** Work on cutting back on the number of times I hit the snooze button.


** Get new sneakers. The pair I have are close to a year old. Any suggestions?

** Spend a hour a week doing some crafting.
