It seemed like forever since football ended. But tonight my Rebels are kicking off our season in Nashville against the Vanderbilt Commodores.

I am so ready to chant Hotty Toddy and to watch the Nkiller Nkemdiche brothers on the field.  And of course I am ready to defend my winning title in the Game Day Belles pick em game.

Key Lime

I learned a couple things last night with the air is out.  A friend has a heating & air degree.  Granted even if I remembered that (vague memory of learning that) I probably wouldn't have called as I have major issues with asking my friends for help on anything.   I have had the wonderful Key Lime Pie Martini I had in Natchez on my mind.  I have looked for a recipe online for one but couldn't find the schnapps listed anywhere around here.  Last week I stopped at the liquor store for some more whiskey, need to be prepared for football season after all, and saw some Pinnacle Key Lime Pie whipped vodka. After checking out their recipes I went back last night and picked up a bottle to give it a try.  It made dealing with no air a lot easier.  Granted when I went to pin the below the recipe is a little different than the one I tried.

Key Lime Pie Martini

2 parts Pinnacle Key Lime Whipped Vodka
1 part half and half

Put the vodka, ice and half and half in a shaker and shake.

Latest Beauty Finds

I have found several new beauty items to add to the cluster of items on my vanity.

I wanted something lighter to wear this summer other than my foundation. I put it on when running errands on the weekend and have worn it a couple times to the office with just mascara.

I ran out of night cream and decided to give a new one a try. I stayed with a Regenerist product though.

I also decided to try a new serum. I have been really pleased with this one.

Throwback Thursday

Seventeen years ago I was still getting settled into Brown Hall for freshman year and getting to know someone who would become one of my best friends.  I can't believe it has been that long since I ran from Fulton Chapel and down the hill to the ZTA house.  But before we go to that we had to go through the craziness that is Rush.

This is Beth and I on pref night.  It is hard to believe some days we were that young.  I do miss the fun days we had in old Brown Town.  This picture has been framed for years and in every room, apartment or house I have lived in since I got this printed.  Right now it sits on the end table in my living room.

A little of everything

**  The old couple on the Swiffer commercials are so cute.  I always thought I would have a relationship like that.  

**  I would really love to go on a spring break trip this year.

**  This has been the worst season of Big Brother in history.

** I am trying to figure out what planner I would like to have for 2014.  I am not sure I want to spend the money on another Erin Condren planner.

**  I got an A in my summer class.  So far I have racked up three As since going back to school.  I hope I can keep it up.

**  I am beginning to wish I had a TV in my bedroom.

Chipotle Cheddar-Beef Enchiladas

I found this recipe on the back of a container of Philadelphia Santa Fe Blend Cooking Creme.  This is a great easy week night meal.  It took me about 20 minutes of hands on time and that includes cooking a box of spanish rice.

1 lb. extra lean ground beef
1/2 c. frozen corn
1 tub Philadelphia Santa Fe Blend Cooking creme, divided
1 c. Kraft shredded triple cheddar cheese with a touch of Philadelphia, divided
1 c. fresh salsa, divided
10 flour tortillas (6 inch)
1 tbsp. chopped fresh cilantro

Heat oven to 350º.  
Brown meat in large nonstick skillet; drain. Return to skillet.  Add corn and 3/4 c. each cooking creme, shredded cheese, and salsa; mix well.

Spoon about 1/3 c. meat mixture down the center of each tortilla; roll up.  

Place, seam-sides down, in 13x5 inch baking dish sprayed with cooking spray; top with remaining cooking creme, salsa and cheese.  

Bake 15 to 20 minutes or until heated through.  Sprinkle with cilantro.

I totally forgot the cilantro in the end.  These turned out really wonderful.  I used the shredded cheese I had on hand which is a combination of Mexican blend and cheddar cheese.  And I used my favorite salsa from Whole Foods instead of the fresh salsa.

End of Summer Read

I have been working through my to read list on Goodreads once my summer class was over.  I have had The American Heiress by Daisy Goodwin on my list for over a year.  It is based in the 1890s and centers around Cora Cash, the richest little girl of her time.  Her mother is determined to take her to England to find a titled husband at the end of the season in Newport.  While in England they are invited to a country estate to participate in a hunt.  Cora gets separated from the group and ends up getting knocked off of her horse and when she came to Ivo is there and helps her up.  He insists on taking her back to his home and calling the doctor which just happens to be Lulworth as he is the Duck of Wareham.  In less than two weeks of meeting Ivo proposes to Cora and she accepts.  The book goes through their first year or so of marriage and the birth of their first child.

I really enjoyed the book a lot.  The book is 468 pages long and I read it in a little more than 24 hours while I was off work last week.  I love books that are hard to put down.  I just wish there was a second book the ending had me wanting to know more about how their lives go or at least an update 20 years later.

Corn and Jalapeno Jam Muffins

I have some time to try new recipes before classes start back up.  It felt great to spend some time in the kitchen today   I wanted something to go along with what I already had in the house.  I found a cornbread muffin recipe from The Fresh Market.

Corn and Jalapeno Jam Muffins

1 1/2 c. flour
3/4 c. cornmeal
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. cayenne pepper
3/4 c. buttermilk
1/4 c. unsalted butter, melted
3 tbsp. sugar
2 eggs
1 1/2 c. corn kernels, fresh or thawed frozen
3/4 c. jalapeno jelly or jam, or spicy tomato chutney

Preheat the oven to 375º.  Grease the muffin tins.  sift together the flour, cornmeal, baking powder, sat and cayenne pepper in a bowl, and set aside.  In a larger bowl beat together the buttermilk, butter and sugar.  Mix in the eggs, followed by the corn, blending well after each addition.  Add the flour mixture, and stir to combine lightly.  Spoon about half of the butter - it will be a bit stiff - into the muffin tins, filling each cup just 1/3 full.  

Drop a dollop of jelly, about 1 teaspoon, on top of the batter in each cup.  

Top with the remaining batter covering the jelly completely for each muffin.  
Bake the muffins 22-24 minutes until they are a deep golden.  Serve them warm.

These turned out amazing.  I used green pepper jelly because I had it in the pantry.  And no I don't know why I had it.  There was still the great mix of sweet and spicy.

August Goals

August is here!!  The best part about it finally arriving is football season is only weeks away.  The bad part is that the year is flying by way to fast.  I bombed pretty bad with all my goals in July.  I started off with a bang but really died out in the last week and half.  The last papers and final took up more time than I expected.  But that is okay a new month has started and time to focus on some new goals.

August Goals

**  Hit the gym 4 days a week for cardio.  

**  Work on abs.

**  Fit in two days of a fitness video.

**  Workout three mornings a week.  I really need to get back in the habit before classes start back up at the end of the month.

** Read four books before classes start.
