Cheddar Chicken and Potatoes

I have been wanting to get back into the kitchen for a couple of weeks but was uninspired.  I sat down Friday night and found a couple of good recipes.  And yes I picked out the easiest one I found.  I pulled this recipe from an old Kraft Food & Family magazine.  Man I sure miss that magazine but I can't bring myself to pay for what is an advertisement for their products.





4 slices of bacon
4 small boneless, skinless chicken breasts halves (1 pound)
1 lb. bag frozen potatoes with peppers & onions, thawed
4 oz. shredded sharp cheddar cheese



Cook bacon in large skillet on medium heat 5 minutes or until crisp.  Remove bacon from skillet to paper towel; discard drippings in skillet.
Add chicken to skillet; cook 5 minutes on each side or until done.  Remove chicken from skillet; cover to keep warm.  Crumble bacon.  Add to skillet with potatoes; cook and stir 5 minutes or until heated through.  


Place chicken over potatoes; top with cheese.  



Cover; cook 2 minutes or until cheese is melted.




It turned out really yummy.  I will be keeping this one around.
