2013 Round Up

It does not seem possible that another year has come and gone.  It all is a blur.  

** I made it through a full year of school with two As and one B.  I am almost halfway through this degree.

** I did better with my workouts but still not as well as I could have been.  I need to quit making excuses and just put in the work.  I already know I feel better when I get them in.

**  I finally attended an Ole Miss bowl game.  

**  I had no vacation this year other than the one night for the bowl game and one night for a mini family reunion.   I need to work on at least a weekend this year.

**  I bought my first laptop this year.  I still love my Macbook.  

**  I didn't give up something I really wanted when unexpected expenses happened.  That would be the first thing I do normally.  I worked hard saving this year for the blue champagne flute and didn't put it aside.

I spent Christmas in Alabama this year.  It was great to spend time with my family especially my grandmothers.  We spent the day at my grandmother's on Daddy's side of the family.  It was the biggest group of us together in years and I was so happy not to be the oldest grandkid there (I am #5).  Sadly at the last minute my cousin was told she couldn't travel anymore (she is due in less than a month with a little boy) so my aunt was with her in Florida.  One of my oldest cousins came for the first time in years and I was so excited to finally meet his beautiful wife.  

Christmas presents weren't the only ones being opened.  Linny is due with a little girl in April so my aunts who won't be able to come home brought gifts this weekend.  Isn't that dress the cutest?

The Gifts, The Gifts

We all know the fun part of the holidays is receiving gifts and seeing the faces when we give them.  And for me it is a double whammy as I only get gifts one day a year.  

My parents got me this pretty blue topaz bangle for my birthday.  The stones are a really light color.  

There is no doubt that S knows me well.  She picked up the Bears cup at Soldier Field when she went to Chicago in the fall.  

According to S, Beth has me ready for a night on the town with her two gifts.

S got me this great bag to pack stuff in for picnics.  

Santa still comes to visit my brother and me.  I got the Waterford flute for Christmas this year.  I should have known something was up since it wasn't my birthday present.  I am still not sure where I will put the Ole Miss rug.

I got myself this pretty for a combined Christmas and birthday gift.

Not really a gift but a must as my previous flat iron died at the beginning of the month.  

I also got a few books and little things.

Salted Chocolate Covered Caramels

I am a sucker for those pull off recipes and coupons on the grocery store shelves.  I pulled off one from Baker's chocolate with some candy recipes.  My father loves all things caramel so I decided to give one a try and take it with me when I head to their house for Christmas.

Salted Chocolate Covered Caramels

1 package (14 oz) caramels
5 oz Baker's Semi Sweet Chocolate, melted
1 tbsp. sea salt

Insert a toothpick into 1 caramel; dip into chocolate, turning until completely coated.  Shake gently to remove the excess chocolate.  Place on a waxed paper covered baking sheet.  Remove toothpick.  Repeat with remaining caramels.  
Sprinkle with salt.  Let stand at room temperature 30 minutes or until chocolate is firm.

I had about an ounce of chocolate left over after covering the whole bag.  I think with the next batch I will start off with just melting 3 more ounces.  These turned out really yummy.  I hope I can keep my hands off of them long enough for any to make it to Alabama.

I finally got into the spirit of decorating for Christmas during the Iron Bowl.  I am not going to lie I considered not even putting up my tree this year.  But then I remembered I had some new ornaments to put up.  

While I was at it I wrapped the presents I have to send off.  
I am to short even with my step stool to reach the top of the tree to add the topper.  

This one is from last year.  I got it on Christmas Eve and the reindeer are the thumbprints for H & G.

I had to ad a new Ole Miss ornament.  

This year's snowman.  He was to cute not to buy.

Walmart has ornaments with the armed forces crest.  I couldn't resist the Air Force one.  I have to remember to go back and pick one up for the parents.

I found this little football so cute.

Ms. Belle was a ton of help as you can tell.

The Fraternity Collection

I found out about The Fraternity Collection from this years Mississippi magazine's Field guide. I love the fact it is a Mississippi owned company.  Not only do you get to create your own cute shirt but they give 10% of the purchase price to a charity of your choice.  I picked out the Tori pattern and paired it with the deep sea long sleeve shirt.  They have so many choices it took forever to decide on the perfect one.  I originally thought I wanted to pick out a turquoise and grey combination but fell in love with the Tori pattern.  

All the shirts come with a pink and blue bow tie in the corner of the pocket.  They also sell koozies and sunglasses straps made out of the pocket patterns.  I loved the additional surprise of bumper sticker in the bow tie design.

December Goals

I completed half of my goals for November. And I am totally okay with not hitting them all. I am trying to wrap my head around the fact that we are in the last month of 2013. Where has this year gone?

I am going to do my best to just enjoy this season.

Peaunutty Hot Cocoa Mix

I was working on cleaning out my recipe box and found a this recipe from Nestle.  I am not sure where I found it or even how long I have had it around.

Peanutty Hot Cocoa Mix

1 c. dry instant nonfat dry milk
2/3 c. Nestle toll house peanut butter & milk chocolate morsels, coarsely chopped
1/3 c. granulated sugar
1/4 c. baking cocoa
1/4 c. powdered coffee creamer
pinch of salt

Place all the ingredients in a medium bowl.  Whisk until evenly blended.  Store in a tightly covered container at room temperature until ready to use or package.  
Makes about 2 cups of mix.

Spoon 4 tbsp. of cocoa mix into mug.  Add 1 cup boiling water: stir well.

I couldn't find the peanut butter & chocolate chip mix so I grabbed a bag of Reece's peanut chips and one of semi sweet chips.  It turned out wonderful.  I might have to take some to work to have everyday instead of always having the instant packets.

Chicken Creole with Chile Cream Sauce

I have not cooked a lot lately.  For one nothing has been very appealing lately.  I finally gave in and pulled out a recipe I have tried from the past.  I found it years ago on the Campbell's website.

4 boneless chicken breast halves
2 tsp. creole or Cajun seasoning
1 tbsp. olive oil
1 can cream of chicken soup
1/2 c. water
1 can (4 oz) chopped green chiles
1 tsp. lime juice
1/4 c. sour cream
hot cooked rice

Season chicken with creole seasoning.
Heat oil in skillet.  Add chicken and cook until browned.
Add soup, water, chiles, and lime juice.  Heat to a boil.  Cook over low heat 5 minutes or until done.  
Stir in sour cream and heat through.  Serve over rice.

When I didn't have rice around the house I have put it over pasta.

A Hodge Podge

** Pinterest has changed it so only registered business or blogs seem to be able to load pins to their websites.  Either that or I can't figure out the changes.  Anyone know how to make it work?

**  I am happy to see Jonathan Rhys Meyers back on my TV.  Dracula might get interesting after all.

**  Is anyone else watching Reign on the CW?  I started it and have really enjoyed it the show so far.

** I hate that the girls weekend had to be canceled. I was so excited for a couple of days in Nashville.  

** R got me addicted to another game. Candy Mania.  Does anyone else play this game?

**  I could deal without the Christmas commercials already being on TV and the radio.

November Goals

I am so happy to see a new month.  Last month ended up being a total bust.  Okay not quite the whole month I did well for the first week and a half.  The only goal I accomplished was taking some time for myself.  And that did feel great!!!  But I need to do better about working out and taking care of my health.

**  Workout two mornings a week

**  Complete the 30 day Squat challenge again.

** Continue to take some time for myself

I think leaving it at four goals this month will make it easier to complete them.  Plus I have a project due this month for my class.

Fourth Anniversary!!

It has been four years since I started this little blog.  
I have met some wonderful ladies through this adventure.  Thanks for continuing to visit.  Especially since I have cut back a lot due to school obligations.  I will admit I didn't know if I would stick it out longer than a month.

Football Weekend

I went down to God's country, Oxford, to see my beloved Rebels take on LSU over the weekend.   R and her daughter little Miss T came and spent the weekend with me.  We had a slumber party Friday night.

Water Tower

Another year if hard work is done.   Water Tower Festival was over the weekend.  I think everything went smoothly.  M & I handled beer & ice sales again this year.  I could hardly move Sunday I was so sore.

A shot of Ingram Hill on stage Saturday night.  This year I got close to one of the acts.  Two of us got sent to pick up the dinner for Ingram Hill with one minor glitch we managed to accomplish that task.  And I saw Justin Moore signing posters when I went into the office for something.  

A shot of Dustin Lynch.  A friends teenage daughter had declared he is her future husband and got lucky enough to meet him but then decided in all her excitement he should be mine.  

One of the local food trucks, Gourmet Grillers, was at the festival this weekend and M made friends with them.  They gave us a sampler plate for our lunch.  They have a sandwich that is pulled pork with macaroni and cheese.  I was surprised it was good but not something I would eat a whole sandwich but I did fall in love with one of the other ones we chose.  L & I had eyed the Krispy Kreme bread pudding and decided to make a date to split an order around 8:30 for the sugar rush to help survive the rest of the night.  It was very melt in your mouth good.

ThrowBack Thursday

A couple weeks ago Beth and I got into a conversation about men with beards.  I made a comment that I miss my skinny Daddy with no beard.  And Beth told me she didn't know Daddy without the beard but he was probably about average size when they met.  So I went through some pictures and found some old pictures to show her he did really not have a beard back in the day.  Granted there was no beard because it was not allowed in the Air Force.

October Goals

Hello October!!

I hope you bring the beautiful fall weather with you.  I am ready for the nice weather even if it brings with it allergy issues.  
As for September you came close to kicking my butt.  I hit my goals.  I struggled last week with my allergies already acting crazy.  I made it.  Even if I had to squeeze in working on my cross-stitch yesterday.  I have struggled to stay up with my class but I am working at staying up to date now.   A bit must as mid terms are this month.

**  Gym 3 times a week.

**  Two workout DVDs a week.

** Three morning workouts a week.

** Do one thing a week for myself.

A Few Ramblings

**  It would be easier to tell if a player is out of bounds in football if they would ban all white shoes.  They blend in with the lines and make it hard to tell at times if someone is out or not.

** I already know one I am making one of my goals for next year is to travel to one Ole Miss game.  

**  A new Ulta opened in the area and I won a free blowout on opening day.  Now to figure out when to use it.  

**  My class this semester is pretty boring.  

**  The Enmy's picked 5 people who really impacted TV to honor separately in the memoroum part and they selected Cory Monteith over Larry Hagman. Really? Larry had a bigger impact. 

** My cousin is going to have a part in this week's Criminal Minds episode.  I am so excited for him.  He is out in LA living and working towards his dreams.

**  I have a new line for Luke Bryan to add to his song Rain is A Goid Thing.  It is rain is a good thing because it washes away the pollen.  My allergies started to acting up yesterday and I am so happy to see the rain today.

I did it!!! I did it!!!

I DID IT!!! 

I started putting stones in a jar for each workout I did last year (idea for it).  Last year I never finished going through the bag of stones.  I am not proud of not accomplishing that goal last year.  But I can proudly say that tonight I put in the last stone from the bag.  I would jump for joy but my legs are sore this week.  

I counted the stones before I put them back in the bag.  The total is 214 workouts for the year.  I will have to remember to count the stones I put in between tomorrow until the end of the year.  Now to figure out what I should do with the fun money.

Thoughts on Game Day

I admit I didn't watch that many games Saturday as so many of the SEC teams were playing at the same time.  I did some flipping during the afternoon games and would check on the other three teams during our commercial breaks.

**  To the Texas Longhorn Network I surprisingly enjoyed your broadcast.  I figured that you would be bias the whole game but you were pretty fair and very complimentary of our Rebels.  Oh and I love that whole line showing where the teams need to be for a field goal.

**  There are some Refs out there with common sense.  Somehow during the Arkansas and Southern Miss game a Golden Eagle player had his chin strap caught in a Razorback jersey.  Instead of enforcing the rule that you have to sit out a play if your helmet is off on the field you let him continue to play when the helmet was separated.

**  There was no doubt during the Bama game the Refs were for Texas A & M.  There was no way Clinton-Dix was intentionally targeting the Aggie player.  Thanks to the booth guys for not enforcing his ejection from the game.  

**  To the Aggie player who threw the Fins Up sign you obviously don't know anything about your fellow SEC teams or you are regretting not choosing the better school.  

**    The Rebels are now 3-0.  The first time since 1989.

This week out beloved cheer will be heard in Austin, Texas as my Rebels travel to play the Texas Longhorns today. 

I am excited that the local CBS is also televising the game because I don't have the Longhorn Network in my package.  Adding to the excitement of the game is that the Rebels are ranked #25 while the longhorns are not even ranked this year.

Bacon Jalapeno Dip

The Food Network magazine pull out came to the rescue for the second dish R & I took down to the Grove last weekend.  I picked out a dip to take too.

Bacon Jalapeno Dip

8 oz cream cheese
2 c. shredded cheddar cheese
1/2 c. sour cream
1/4 c. milk
4 slices chopped cooked bacon
1 tbsp. bacon drippings
1 tsp. white wine vinegar
2 thinly sliced jalapenos
Panko breadcrumbs

Mix all the ingredients in a bowl and then spread in a baking dish; top with buttered breadcrumbs (preferably panko).  Bake at 350º until golden and bubbly, 30 minutes

This turned out amazing.  Though it is better while still warm.

Bacon Taco Wings

The second most important thing on game day is a good recipe.  R and I were trying to decide what to make and she suggested some wings.  I went through my cookbooks to find something that would be good.  I found the perfect one in a Food Network Magazine 50 Wings pull out.   

Bacon Taco Wings

3 pounds chicken wings
3 tbsp. taco seasoning

Toss the wings with 3 tablespoons of taco seasoning.  Then wrap each wing in half a piece of bacon.  Bake at 425º until very crisp or about 45 minutes.

These turned out really great.  And were a hit at our table.  

Motivation Monday

I know I need a great deal of motivation this week after the weekend.  I ate way to much and the closest thing to a workout was walking around the Grove and to and from the stadium.

Grove Time

Yesterday I headed down to Oxford with R for a day in The Grove and to watch Rebels play South East Missouri.  The game was declared a red game.  

I am not sure who decided that as SEMO colors involve red too.
