Whiskey Chili

I was looking around the Fresh Market website this summer looking for the recipe for a pasta salad they sell.   No luck there.  But I got to exploring the rest of the recipes and found one for Whiskey Chili and decided to print it off and try it out when the temps went down.  I pulled it out when I realized the temps were going to be in the 50s last night.  A perfect meal for a football game night.

Whiskey Chili

1 lb. ground beef
1 lb. ground pork
1 medium red onion, diced
1 small red bell pepper, diced
2 (14.5 oz) cans petite diced tomatoes
1 (8 oz) can tomato paste 
4 tbsp. chili powder
1 tbsp. cumin
1 tbsp. paprika
4 cloves of garlic, minced
1 tbsp. garlic powder
1/2 tsp. cayenne pepper
1/2 c. water
4 slices bacon
1 tbsp. cocoa powder
1/4 c. whiskey
salt & pepper to taste
1/4 c. cheddar cheese, grated
1 tsp. fresh cilantro, chopped

In a large skillet, brown beef, pork, onion and peppers until cooked thoroughly and vegetables are soft.

 Transfer to large stockpot and add tomatoes, tomato paste, chili powder, cumin, paprika, garlic, garlic powder, cayenne pepper and water.

Cover and simmer over medium heat for 1 hour; stirring occasionally.
Meanwhile, render bacon until crispy; crumble bacon and set aside for garnish.  After one hour, stir cocoa, whiskey, salt and pepper to taste in chili.

Cover and simmer for 10 additional minutes.

To serve, spoon into bowls and garnish with cheddar cheese, bacon and cilantro.

I wasn't paying that much attention to my list and only picked up one can of diced tomatoes.  Thankfully I had a ran of rotel that came to the rescue as I didn't want to go back to the store a third time.  I thought I had cocoa powder but when I got home and was putting the groceries away I realized I didn't.  And I did debate using hot chocolate mix instead of going back out. I used hot sausage for the ground pork.  The chili was wonderful.  I mixed up some cornbread muffins and blackberry cobbler to go along with it. 

It was a great fall meal.  And a great night of football.

Walk of Fame

Saturday we headed out on a whole load of adventures.  The last of which was exploring several blocks of the Hollywood Walk of Fame.   Before leaving the grove shopping area Beth and Ian figured out the best place to park.  Which we found an empty lot about two blocks south of Hollywood & Vine.  We didn't have a specific star in mind to see and knew we would find one somewhere that we were happy with.  It ended up being a perfect spot.  We found a lot of our favorite stars and for a couple more than one of their stars.  Poor Maddy couldn't figure out why we were so excited over any of them and was really happy to see a few she knew.  It was perfect timing in the day as Jaxs slept through our tour and squealing in delight.

Poor Rodney he can't get any respect anywhere.  A chunk of his name is missing.

We had to explain to Maddy about the first sex symbol.

Anytime I think of Jackie I think of him saying "Sum Bitch" in Smokey and the Bandit.  Or at least that is how it sounds.

My mother had an uncle who was special and loved Roy Rogers.  He even went to go as far as telling my grandparents when Nanny was pregnant with my uncle they were going to name him Roy Rogers.  They didn't but named him after my  great grandfather but that sure didn't stop Uncle Jack from calling him Roy half the time.

PCH Highway

We held off on all of our adventures until Saturday.  That way we could all enjoy them together.  We got up early and headed down the mountains to the PCH Highway to drive along the coast to the Santa Monica Pier.

Hello Hollywood

My first glimpse of LA as we were leaving LAX.

I had the best chicken gyro I have had in a long time off one of the trucks.  It was such a fun way to enjoy dinner and a fundraiser for one of the local schools.  Beth & kiddos let me enjoy some of the sweet potato bites off of the sliders truck.  They were to die for but I swear there was no sweet potatoes involved.

I didn't get any pictures but Wednesday Jaxs had a blast playing in my makeup.  Thankfully his father was amused and not wanting to kill me.  He did look a bit like Alice Cooper at one point.

Quick update

** I am still trying get caught up from vacation. Oh the loads of laundry & cleaning to be done. Not to mention catching up on some cuddles with Belle.

** Before I took off on a jet plane last week I got to spend part of my Saturday morning watching H play in his first soccer game.

** G had fun playing in his chair.

** I picked up a few pair of socks to go with my boots. Which I can't wait for it to be cool enough to wear

** Packing is a chore. It caused me to realize I have to much makeup.

** Watched this stack grow.

** I didn't see much of the famous traffic out in LA

Rebels this might not be our great Johnny Vaught but Paul "Bear" Bryant has some wise words that will continue to serve y'all too.  I am so proud of the Rebels this year.  The two wins we have, which is more than all of last season, were not pretty wins.  And we did lose to Texas pretty badly last Saturday.  But if you listen to these wise words and play tell the end of each game we will start seeing more Ws than Ls in the column.
