This is what I believe the SEC should still look like.

But this is what we are now. No worries the SEC will still dominate all other conferences.

And how could you not have a drink on game day?

Aren't these yummy looking?

Fave TV - Sesame Street

Who didn't love Sesame Street as a kid?  Or watches it now with their kiddos?  I couldn't sleep tonight so I got up to play on the computer.

My favorite character was Count von Count.  I know most went for Big Bird or Cookie Monster.  I have an older cousin that loved Big Bird and started screaming when they went to cut her birthday cake at 2 or 3 that they were killing Big Bird, so yes no cake at that party.  One of my uncles gave me an Oscar the Grouch stuffed animal and he was the scariest character to me.

I don't know why it was the Count I loved the most or maybe it was a telling sign I would end up working with numbers.  Okay back to what brought me down memory lane.  I saw a story go by on Yahoo that the man, Jerry Nelson, who was the puppeteer and voice for the Count died at the end of last week.

Thank You Jerry for bringing to life such a wonderful character for all of us kids.  You will be missed.

Counting Down

I am so ready for football season. We have nine days until the Rebels kick off their new season. And this little gem will make it more fun.

I stopped by Dillard's when I got off work for some make up.  Wrong day to go.  I walked into a huge sale in every department.  There are a couple pair of shoes I might need to go back for too.

A meet up

I met up with Kate over at Team Skelley this morning.  It was the first friend I have met who I made through the blog world.  Katie sent me a message that she was going to be in Memphis this weekend and would I want to meet for coffee.  So this morning we met at a Starbucks.  It was great to sit and talk face to face for the first time, at least I am hoping it won't be the last time.  Katie and I spent an hour just chatting about life.

Don't you just love the necklace that Katie is wearing?

What a great way to start a week off.  I hope Katie and her family made it home safely.

Tequila Turkey Fettuccine

I am in a rut with cooking.  For the most part I am not cooking at all.  So with the parents coming I picked Guy Fieri 's cookbook Cookin' It Livin' It Lovin' It from the library.  My father was looking for a recipe he had seen on a show and couldn't find online according to my mother.  Turns out she was wrong it wasn't his show but Diners, Drive-Ins, and Dives.  I am glad I picked it up because it inspired me to get back in the kitchen.

Tequila Turkey Fettuccine

2 tbsp. olive oil
1/4 c. strips of red onion
3 tsp. minced jalapeno
5 oz cooked turkey breast, sliced into 1/2 inch pieces
1 tbsp. minced garlic
9 oz fettuccine
1 oz white or silver tequila
1/2 c. heavy cream
1 tbsp. fresh lemon juice
1 tbsp. chopped cilantro, plus 2 springs for garnish
1/4 tsp. fine sea salt
2 tbsp. grated Parmesan cheese
2 tbsp. seeded and diced Roma tomato
freshly cracked black pepper
2 lime wedges

Bring a large pot of salted water to a boil.
In a large skillet over high heat, heat the olive oil.  Add the onion and jalapeno and cook until the onion is translucent, about 3 minutes.  Add the turkey and roasted red pepper and mix lightly, taking care not to break up the turkey too much.  Add the garlic and cook for 2 minutes.
Cook the fettuccine AL dente, according to the package directions.  Drain.
Pour the tequila around the edge of the pan to deglaze it.  Add the cream and let reduce for 2 to 4 minutes.  Add the lemon juice, cilantro and salt and stir to combine.  Add the fettuccine and toss, then add the Parmesan and toss again.
Nest the pasta on a serving place.  Garnish the pasta with sprigs of cilantro and a sprinkle of tomato and freshly cracked black pepper.
Serve with lime wedges.

I love that this recipe makes only two servings.  So no I didn't eat the whole bowl but it looked pretty in my pasta bowl.

See told ya I didn't eat it all.  ha!

Okay so you know I didn't follow the recipe word for word.  I missed the red onion part and thought I had fettuccine at home and didn't.  Not to mention since I don't like turkey I used some baked taco chicken.  I didn't want to run out to the store for just two items so I left out the onion (not a huge fan anyways) and subbed in angel hair pasta.
I think the meal turned out great.  Yes the onion would have added some extra flavor so next time I don't need to forget it.  Of course I love the fact I only have it for one night of leftovers.

Cookbook Review - Guy Fieri

My father was looking for a recipe he saw on one of Guy Fieri's shows so I picked up his cookbook Cookin' It, Livin' It, Lovin' It.

Source: amazon.com via Ruth on Pinterest

Throughout the cookbook Guy and his friends and family give storied about his past and the guy in general.  Though the sweetest thing is that he dedicated the cookbook to his sister Morgan who he lost last year to skin cancer.  The cookbook is a total of 400 pages of recipes, stories and pictures.  Who know we almost didn't have the Guy in our lives he really didn't want to go out for The Next Food network Star but gave into pressure from his friends.
The illustrations throughout the book and especially at the front of each section by Joe Leonard are just amazing.

This was the best picture I could get of one.  Even if you are not sure you want this cookbook next time you are at the store pick it up just to look at the illustrations.
Guy has a section placed before the recipes that list out what he believes to be the essentials for any kitchen. The list includes equipment, pantry items, appliances, electronics, pots and pans, and utensils.  And for those of us who dream of an outdoor kitchen the essentials for those too.
The cookbook includes some amazing recipes not only from his show Guy's Big Bite but a few from the restaurants he owns in California and new ones for the book.  It was hard to narrow it down to just one to try this week.  I finally narrowed it down to one and might just have to try a second one before I return it to the library.
This cookbook has gone on my wish list not to mention my father's. I have picked up a couple cookbooks from the library in recent months but they just did nothing for me good or bad.  But Guy's cookbook was amazing.

Random Thoughts

** Directv is tempting me back with the NFL ticket included. I don't get to watch enough Bears games.

** We are under a month until football season kicks off. Hotty Toddy!!!

** I really hate seeing political ads during the Olympics. Can't they take a break for two weeks?

** I need some new tunes for my iPod. I am hoping that will get me motivated. Any suggestions?

** I really wish NBC would show all of the gymnastic events at one time instead of parts. I hate missing any of it. And I know I didn't see the men perform on the rings yet. That event always leaves me in awe

** There are some hotties in men's swimming. And why don't they wear the speedos anymore?
