Lemon Icebox Pie Ice Cream

It is so hard not to find at least once recipe in each Southern Living issue that I am just dying to make.  This ice cream recipe has been on my mind since I read it a couple weeks ago.  I am glad I waited to try it after the mishap with the fridge last week.



Lemon Icebox Pie Ice Cream

3 to 4 lemons
2 c. half and half
1 (14 oz) can sweetened condensed milk
3/4 c. coarsely crushed graham crackers
1 tbsp. lemon zest

Grate zest from lemons to equal 1 tbsp.  Cut lemons in half; squeeze juice from lemons into a measuring cup to equal 1/2 cup.
Whisk together half and half, sweetened condensed milk, and lemon juice.  Pour mixture into freezer container  of a 1 1/2 quart electric ice-cream maker, and freeze according to the manufacturer's instructions.  Stir in graham cracker crumbs and lemon zest; transfer to an air tight container.  Freeze 2 hours before serving.



The ice cream turned out really yummy!  I will be making this one again.

Craptastic Monday

Today has been total craptastic.  I realized I had nothing to wear to the event tomorrow night and needed to go shopping which I was not excited about.  I found something at Target.
Work sucked thanks to some morons I have to deal with.  The day just drug along.
Then I come home and the house smells a bit funny.  Didn't think much of it at first.  Until I went to fix dinner.  Yep the thunder storm last night knocked out the outlets on the side of the kitchen with the fridge.  The storms rarely knock my power out and didn't think a thing about it at the time.  But then all the noise and light woke me up around midnight and all I cared about was getting back to sleep.  The only salvageable items in the fridge was beer.  So my dinner tonight is cookies & beer.

Possibiity

I received an email a couple weeks ago, along with the rest of the alums that IO has email addresses for in the area, stating that their is a possible extension opportunity for ZTA.




There are 3 or 4 ladies coming down from IO to meet with the Ole Miss officials Tuesday.  This is really exciting news and something we have been waiting to hear for a couple years.  I hope it works out that ZTA is selected as the one to be the next sorority on campus.  I am not sure how many other groups are talking to Ole Miss but of course I am partial to the one they should choose.

The Gamma Delta chapter of ZTA closed at the end of my junior year.  It is sad to go down old row and see our house sitting there without our letters on it.  I hope one day we see them back on a house on campus.  


If any ZTAs in the Oxford area have time come by the Hampton Inn in Oxford at 7 for a meeting with the ladies from IO.  

Keep your fingers crossed we are the chosen group.

Now off to figure out a badge attire outfit to wear Tuesday night.

The Big Reveal


I finished putting the bathroom back together last night.  




I really like the color.  



I am still trying to figure out how to tie the fabric curtain off to the side.



I did keep a few of the martini items in the space.




I couldn't get a good shot of the bath mat I picked up.












I picked it up at Bed Bath and Beyond but now that it is down  I am not sure I am totally in love with it.

I am still looking for new artwork for the space and towel racks that I like.  But hopefully I can do that before the parents visit at the end of the summer and have Daddy put them up. (oh, family if you are reading this don't tell them I did this I want to see how long it takes them to notice.)  But already it is looking like a more adult space.

The paint color I used is from the Eddie Bauer Collection at Lowe's Stem Green.


PInteresting/Semi Wordless Wednesday

With Memorial Day right around the corner I have been thinking about Entertaining.  I might get around to throwing a BBQ this summer.






Oh how nice would it be to have a pool to chill out next too.

Transforming

The last time my guest bathroom looked like this was Wednesday night.




These will are now going to be gone.

I spent Thursday and Friday nights prepping the bathroom to paint this weekend.  It took both nights because I ran out of tape.  


This is what it has looked like since Saturday morning.  I started to take the tape down tonight and it wasn't ready yet so I will have to do some touch ups.



I saw a tip on Pinterest about how to cover the back of the toilet while painting and decided it would work great for the mirror too.  The Glad press n' seal worked great for that too.













I can't wait to put the room back together this week.

Blackberry Wine Sorbet

I have been wanting to try this recipe since I got my ice cream make last year.  And I thought it would be one of the first one I did make but it has taken me a year.  But it is better late than never.


Blackberry Wine Sorbet

3 c. blackberry wine
1 c. sugar
1/3 c. fresh lime juice
1 c. fresh blackberries
1 c. blueberries
1/2 c. raspberries
2 tbsp. sugar
2 tbsp. blackberry wine
1/2 tsp. lime zest


Cook first 3 ingredients and 1 cup water in a small saucepan over medium heat, stirring occasionally, 3 minutes or just until sugar dissolves.


 Fill a large bowl with ice; place saucepan in ice, and let stand, stirring wine mixture occasionally, until cold (about one hour).


Pour mixture into freezer container of 1 1/2 quart electric ice cream maker; freeze according to manufacturer's instructions. (Instructions and time will vary).  Spoon sorbet into an airtight container; cover and freeze at least 8 hours.


Combine blackberries and next 5 ingredients; toss gently.  Cover and chill up to 2 hours.  Serve sorbet topped with berries.


I thought about this recipe while grocery shopping about 2 weeks ago and picked up a bottle of the blackberry wine there.  I didn't pick up the berries to serve with the sorbet.  I don't think it would be worth that unless you are serving them at a party.  But if you wanted to this is what it would look like (Southern Living).

Weekend Update


I had a busy weekend at least for me.  Friday I spent part of my day volunteering to set up Taste of Hernando. It was a fun evening.  I got to try some new beers and some new restaurants.  There were also some great items up on the silent auction tables.  One of the hottest items on the table was


A lot of craw fish could be made with this pot.  

There were also tickets to ZZ Top and Brad Paisley concerts this summer.  I really debated putting in a bid for the ZZ Top tickets but chickened out because I was not sure who would go with me.  I totally missed the tickets to see Brad, so sad it would have been a cheaper way to go as S and I decided not to go for the cost.  Maybe there is still a chance of winning tickets to a concert this summer.

S and I took a break during set up to go find her a dress for the event.  While she was busy trying on dresses I found some new bling.



I already had an outfit picked out and I found some perfect accessories for the evening.


Saturday morning I got up and bummed around a bit until I had to head down to Hernando for H's first T-ball game.  I stopped by the farmer's market on my way and picked up some yummy bread from LaddyBugg Bakery (one of the vendors from the night before).

Waiting on first base.  Did I mention the game was at noon?  And we had near or record highs all weekend.


G had his own adventures while big brother played.  And trust me if he didn't think you were paying much attention he did his best to get on the field to pay too.

Other than the heat it was a blast.  The kiddos are so cute at this age. One kid was told to run home from thrid base and he went straight for the dugout.  But S did realize she didn't think to ask if I wanted a team shirt.  She is now checking to see if there is a chance I can get one.

April Update

I can't believe we have been through four months this year already.  I really wish 2012 would slow down a bit. I feel like I have not done anything towards my goals.  I know in reality I have even if I have not seen many changes.

I finished both the monthly challenges I took on last month.  I am so proud of myself for accomplishing that.  My arms don't jiggle as much and my thighs are slimmer but nothing came off my hips.  I slacked after the first two weeks of April in doing ab work at least twice a week.  I am down another 0.3  pounds in April.  And a major lesson has been learned that I need to turn back into a cardio queen if I want to start seeing those numbers getting bigger and the clothes sizes getting smaller. How did everyone else do with the April challenges?

I debated what I wanted to do for my May workouts.  I was trying to decide between Jillian's Kettlebell workout, Fitness magazine Summer Slim Down, and the Self magazine Drop 10 Challenge.  And the Fitness magazine Summer Slimdown Workout won out.  I love that you can watch a demo of the moves (here) on the website otherwise I would not be sure on one or two.  I am just getting around to starting it this week.




It will be a long time before I get a body like the above model if ever but at least I am taking a step in the right direction.

I also found another monthly challenge that I started but not sure I will be good about doing them everyday especially on the days I do the Fitness magazine workouts.

Brain Dump


** I decided on a color for my guest bath.  Thanks for the input everyone.  I went with MLS idea of some color.  Now to find the time to paint and put up the new items I have picked up.  I will reveal the color when I finally get it painted.


**The bathroom color decision started the redecorating and updating juices flowing.  Even if they partly brought on by a need.  


S picked out the shade and it has a small pattern in it so no crafting needed now.  

** I am loving the curtains on the cover of the May issue of Southern Living.  And yes I have been trying to figure out where they would work in my house.  



** Whoever mentioned the show Duck Dynasty I owe you a big THANKS!!  I finally watched a couple episodes tonight and couldn't quit laughing.  I needed that after the crazy stress of work.  If you haven't watch this show you really should.

** Tomorrow is my Friday.  I am so ready for a long weekend.  S has be volunteering Friday at an event with her.  And Saturday is H's first T-ball game.  

** The strawberries don't look like they are going to survive again this year.  I haven't gotten around to planting herbs and I am thinking I probably shouldn't stress the green thumb any more than I already am this year.
