Berenstain Bears

I was sad to read today that the co-creator of the Berenstain Bears books had died over the weekend.  I loved those books as a kid.  Not to mention reading them to my younger cousins and the kids I baby-sat.  I realized though that I don't have any of these books in the toy box for when the nephews are here.  I will have to work on correcting that next pay day.  




The stories were always such cute stories and they taught you a lesson without it feeling like one.


Did you know that Dr. Suess helped the Berenstains publish their first book?




Thank you Stanley & Jan for bringing these wonderful characters into our lives.  You will be missed.

Tortilla- Crusted Pork

I am working on cleaning out my freezer and pantry a bit.  They have both gotten full after hitting up several deals since December.  I had some pork tenderloin in the freezer for almost two months so I pulled that out and then searched for a new recipe to try.  I pulled some Spanish rice out of the pantry to go along with it.  So I only needed to buy two bags of tortilla chips and the stuff for the Pico de Gallo at the store this week.  This recipe has been sitting in my binder from Southern Living since May 2008.


Tortilla-Crusted Pork

2 lb. pork tenderloin
1/3 c. finely crushed blue-corn tortilla chips
1/2 c. finely crushed tortilla chips
1 tbsp. coarsely ground pepper
1/2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. ground cumin
3 tbsp. extra virgin olive oil, divided
Pico de Gallo
Tomatillo Salsa


Remove silver skin from tenderloin, leaving a thin layer of fat covering tenderloin.  Cut tenderloin into 1 inch thick medallions.


Combine blue-corn tortilla chips 



and next 5 ingredients in a bowl.  


Brush pork te\medallions with 1 1/2 tbsp. olive oil, and dredge in tortilla chip mixture, pressing mixture onto medallions on all sides to thoroughly coat.


Cook pork medallions in remaining 1 1/2 tbsp. hot oil in a large skillet over medium heat 6 minutes on each side or until done.





Serve with salsas.  Garnish if desired.


Pico de Gallo
2 medium tomatoes, seeded and diced
1 medium size ripe avocado, diced
1/4 c. diced white onion
1 Serrano or jalapeno pepper, seeded and finely chopped
2 tbsp lime juice
1 tbsp. extra virgin olive oil
salt to taste

Toss together first 6 ingredients in a medium bowl.  Cover and chill 1 hour.  Season with salt to taste.

Tomatillo Salsa
2 c. diced tomatillo
1/2 c. diced onion
2 tbsp. chopped fresh cilantro
2 tbsp. extra virgin olive oil
1 jalapeno pepper. seeded and finely chopped
1 tbsp. lime juice
1/2 tsp. pepper
salt to taste

Stir together first 7 ingredients in a medium bowl.  Cover and chill 1 hour.  Season with salt to taste.




I took the shortcut today and bought the already made Pico de Gallo at Kroger.  For one it ended up being cheaper than buying the ingredients for the one in the recipe.   The On the Border bag of chips were on special this week.  They didn't have any plain tortilla chips left so the ones I got were lightly seasoned.  The dish turned out great.  The real test will be tomorrow when I warm it up for lunch.

Mardi Gras Madness Weekend

I went to my first Mardi Gras last weekend. Not only was it great to finally mark that item off my bucket list but it was great to spend time with friends I don't get to see often enough.  We stayed in Uptown for the parades.
Due to the weather on Saturday all but one parade ran and since it was the Mid City so we didn't go.  So we spent the day going down to the Lower 9th Ward and playing cards, while drinking of course.   We did stay out of the craziness of the Quarter too, which was fine with me because I could deal with out those crazy crowds.


The friends I was staying with have a friend who lives in a 3rd floor apartment that faces the parade route.  It gave a nice break from being in the crown on Sunday.

MIA

Sorry I have been MIA for about two weeks.  Life has gotten crazy between training and going to Mardi Gras last weekend.  I spent last week catching up on all the chores I had missed during the two weeks of training and getting ready to be out of town last weekend.  I promise to get back to blogging this week and write one on Mardi Gras.

Loving It

I can't remember who told me about the Moroccan Smooth Perfection Blowout Cream.

But I am glad they did.  I picked up a bottle last month and have used it almost everyday.  And that includes days when I wash my hair at night and let it air dry.  The bottle says it is for helping to eliminate frizz and fly aways.  And it does that whether I blow dry my hair or let it air dry.  One product being able to do that with one product makes it a winner in my book.  The fewer things on my vanity.

January

I made it through the month of January.  I didn't make it as far as I would like with the fitness goal.  But I did lose 2.5 pounds and a total of 1.5 inches.  It is a good way to start out the year and gives me more motivation to keep going.  I hit my goal of no cokes for the whole month.  And I am going to get back on that kick after falling off yesterday during training.  I did well with eating healthy and not eating out but once a week and even made it two weeks without eating out at all.
I saw a couple ideas to keep me motivated on Pinterest.  One was putting a dollar in a jar for each workout completed and I was doing that but I don't keep a lot of cash on me so that was getting hard.




Then I saw an idea where you put a stone in a jar for each pound lost.




So I decided to combine the two ideas.  I am putting a stone in a jar for each workout I complete.  Each stone will be worth a dollar.  I have it sitting on my dresser so it is a reminder every day.






I saw a calendar on Megan's blog call Fab AB February.  It is a calendar of ab workouts for 6 days a week.  I am a little behind and will have to work to catch up on the four days I have already missed.

My goals for February are to continue with the workouts trying to get in 4 a week.  And continue keeping cokes out of my diet.  Not to mention doing the monthly ab challenge above.
I also want to continue with my goal of cleaning one room a month and getting rid of the junk.  I got  my office done in January and it feels great to have it complete.  It is a lot less stressing to do one room a month than trying to clean the whole house over a weekend of spring cleaning.
And of course have fun in New Orleans for Mardi Gras.
