Happy Monday!

Today starts 2 weeks of training on the new system.  i will be in training for 3 hours a day on top of my normal duties and one Saturday.  There are two weeks of long days ahead but the paychecks will be nice.

Cinnamon Streusel Coffee Cake

I grew up with this being cooked in our house and at the grandmother's.  And probably one of the reasons the first cookbook I bought in college was the Bisquick cookbook.  I was craving it this weekend and decided to pull it out and make it.  With training happening this week I am taking it into the office to share as I in know way need to eat it all on my own.

Cinnamon Streusel Coffee Cake

2 c. bisquick
2/3 c. milk or water
2 tbsp. color
1 egg

Streusel topping
1/3 c. bisquick
1/3 c. packed brown sugar
1/2 tsp. ground cinnamon
2 tbsp. firm margarine or butter

Heat oven to 375°.  Grease a round pan, 9x1 1/2 inches.  Make streusel topping; set aside.

Stir remaining ingredients until blended.  Spread in pan.
Sprinkle with topping.

Bake 18 to 22 minutes or until golden brown.  

For the Streusel topping
Mix bisquick, brown sugar, and cinnamon.  cut in margarine, using fork or pastry blender, until mixture is crumbly.  

Can you tell I was really ready to eat it.  I forgot to take a picture before cutting a slice.

Chicken with Pepperoni-Marinara Sauce

In keeping up with the get healthy goal for 2012 I was looking for some new recipes to try.  Along came the January/February issue of Cooking Light.  I haven't finished the issue but when I saw this one Saturday I knew it was going to be my dinner this week.

Chicken with Peperoni-Marinara Sauce

1/2 tsp. minced fresh garlic
16 slices pepperoni, coarsely sliced
1/4 tsp. dried oregano
1 1/2 c. lower sodium marinara sauce
2 tbsp. chopped fresh basil
2 tsp. olive oil
1 1/2 pounds chicken cutlets
1/4 tsp. freshly ground black pepper
1 c. shredded part skim mozzarella cheese

Makes 4 servings

1. Preheat broiler to high
2. Heat saucepan over medium-high heat.  Coat pan with cooking spray.  Add garlic and pepperoni; cook 2 minutes or until garlic begins to brown, stirring frequently.
Add oregano; cook 30 seconds.  Add marinara sauce; bring to a boil. 

 Reduce heat, and simmer 5 minutes.  Remove from heat; stir in basil.

3. Heat a large ovenproof skillet over medium-high heat.  Add oil; swirl to coat.  Sprinkle chicken with pepper.  Add chicken to skillet; cook 5 minutes or until lightly browned, turning after 3 minutes.  

Spoon sauce over chicken;

 sprinkle evenly with cheese. 

 Broil 2 minutes or until cheese melts.  

It turned out really awesome.  I had to make some garlic bread to go with it.  If Kroger had not had it on special this week for $1 I wouldn't have thought about it.

I used the Prego  Heart Smart sauce because it was the one with the lowest sodium that Kroger carries in my store.  Cooking Light recommends McCutcheon's.  I used my cast iron skillet because I couldn't remember if my other skillets could go in the oven, I have had them 10 years and never needed to know that before.  Next time I will wait to cut the broiler on until I start the chicken.  The cheese got to browned in a minute starting it at the beginning as stated in the directions.  This is a quick recipe so you can do it on a work night too.  I was talking about it this week at work and a couple people said it would be good over pasta and I am sure it would be but eating it without was very filling too.

380 calories
14.7 g fat
48.5 g protien
28.7 carbs
533 mg sodium
122 mg cholestrol

Gym Peeves

There are a few things that just drive me crazy about my fellow gym members.

**I realize it is a personable choice if you smoke. I can't stand the smell of it. And if you do the smell gets worse when you start sweating. What is worse us when you can smell the person coming from a few feet away. I won't lie if I can smell the person I won't get on a machine next to me and if it gets to bad I will get off.

**Don't stand there and stare at me because you want my machine. It won't make me finish my workout any faster.

**Is there really a need for the guys lifting weights to yell so loud.

**If I can hear your tunes over mine then I feel sorry for you when you get old as you won't be able to hear.

**I don't need to hear your phone conversations. And while your at it the weight machines are not chairs please go somewhere else to talk on your phone.

We had some cold days last week and it had me thinking of Winter weather.  It looked like we were finally going to have winter temps but I am not sad to say that they didn't last long.   Snow is pretty but I can do without it unless it is over a weekend and it doesn't cancel my plans.  I get scared driving in the ice we usually get.

Road to the Super Bowl

My beloved Rebels have not had a lot to be proud of the last two football seasons.  But we can be proud of the fact that no matter what we will have two players in the Super Bowl this year.

We also have three voted into the Pro Bowl.  Though one of these guys won't be making it if they are playing in the Super Bowl.  Congrats to Patrick, Eli, and Michael Wallace (Pittsburgh Steelers).

Healthy Update

I think 2012 needs to slow down a bit.  How have two weeks already passed?
I did well hitting my goals last week.  I went another week with no cokes.  Yippee!!  Now to keep it up.  I ended with a migraine on Thursday and had a headache again on Friday.  But it is not going to get me down.
I also hit my goal of 3 workouts last week.  I also got in an extra one.  I did fail on getting in a strength workout.  I always have issues getting in the strength I am a cardio queen.  I did get in one ab workout.  I pulled it off Sparkpeople, it can be found here.  My abs were sore for two days after doing it.  I am planning on working it in again this week.
This weeks goal is to get in 4 workouts.  Two ab workouts and one strength workout.  Keep up with the no coke rule.  As long as I don't eat out that will help me out.  Not to mention save some money.
I weighed yesterday morning.  And I am down 1.8 pounds so far this year and 0.75 inches overall.  I wish it was more but it is a good start.  I will take what I can get at the moment.

Vacation Dreams

We were told on Friday that we must have our vacation days submitted for the year by the end of the month.  I have no clue if I can afford to go anywhere let alone where or when to go.  Oh my!  I know I am going to Mardi Gras and to the Ole Miss vs. LSU game in Baton Rouge in November but nothing else.  It has had me thinking about my dream vacations, most of which are years away if ever.

I have never traveled outside the country and can't wait for the day that I finally get to. Okay maybe not all the long flights. I got my passport last year so time to start picking one to start saving towards and talking someone into going with me.

Six in a Row

If there was any doubt in your mind who is the best college football conference the last six years should prove it.  The SEC conference brought home their sixth title in a row last night.  The only bad part about that is it meant that going into bowl season the SEC automatically had a loss on the books.

And yet another reason for people to hate the BCS championship system.  This year the #1 and #2 teams were both from the SEC.  Last night LSU Tigers and Alabama Crimson Tide played for the title.  I was torn who to pull for and ended up pulling for both teams throughout the game.  In the end people I love were going to be upset.

In the end the crystal football went back to the state of Alabama for the third year.

CONGRATS!!  To the Crimson Tide!  ROLL TIDE ROLL!!!

Get Healthy Resolution

My only resolution this year is to get healthy.   Instead of jumping head first all or nothing this year I decided to take it in baby steps.  I have fallen off the workout wagon big time since September.  I might get in one a week if I was lucky since then and I think it was only one the whole month of December.
My goals for last week were to workout 3 times and cut out cokes in the morning.  I archived those goals though there were a couple rough starts to the mornings last week.  I also added in some healthier food too.
I didn't hit the gym as I had hoped but I did get in 3 workouts with my Wii.  I also started logging my food and workouts on Sparkpeople again.  I just need to keep up with that for a couple months to get a handle on my eating habits.  I only ate out once last week as a late birthday celebration with a friend and her family.  I am hoping that it will be last time I do for the month.
This week my goals are to get in 3 workouts and continue the no cokes rule.  Now that my hours have changed at work it will make getting to the gym easier.  I will be getting off at 4:30 again so that will mean beating most people to the gym after work and less fighting for a machine.  I need to also add in a strength workout.
I picked up some healthy items for my lunch this week at the grocery store.

Rose Parade

It just doesn't seem like a New Year without snuggling down with a cup of hot chocolate to watch the Rose Parade.  So it was a little sad to not be able to do that on 1/1 but the Tournament of Roses Association sticks to the old rule created by Valley Hunt Club that of the First falls on a Sunday the parade will be on 1/2.  The Valley Hunt Club started the parade in 1890 by decorating their carriages on their way to games.   By 1895 the  parade had grown to much and the Tournament of Roses association was created to handle it.  The parade has come along way from decorating the carriages with fresh flowers to the moving floats covered in plant materials and flowers we see during the parades these days.

I loved the Elizabeth Taylor float this year.  It is amazing how they can create a photo with plant materials.

The flying pigs cracked me up.  

The Inchworm was cute with the clown face.

The Roy Rogers float made me smile.  My great uncle was obsessed with Roy and told my grandparents to name my uncle Roy Rogers but even though they didn't he always called him Roy.  Uncle Jack was special and I hate he died before I could remember him.

I loved the hot rod.

Being a former girl scout I loved their 100th Anniversary float.  But I couldn't find a picture of the float on Google.  And yes there is a photo of  Juliette Gordon Low on the back.

White Chocolate Kisses Ice Cream

I know this is not going to help me with the be healthier in 2012 but I had this idea in my head and it wouldn't go away.  I had some Hershey Candy Cane Kisses still around and wanted to do something with them.

White Chocolate Kisses Ice Cream

1 c. milk
1/2 c. sugar
8 oz. white chocolate 
2 c. heavy cream, well chilled
1 tsp. pure vanilla
20 Hershey's candy cane kisses

Melt the white chocolate, milk and sugar in a saucepan.  Take the pan off the stove and let it cool.  Once the mixture cools pour in the heavy cream and whisk together.  Put in the fridge until it is all cold.  Once the mixture is cold add it to the ice cream maker and let it mix by the manufacturer's directions.  While the white chocolate mixture is in the ice cream maker chop up 20 kisses and add to the ice cream maker in the last 5 minutes of mixing.

I will admit I was not real sure how it would turn out.  But it is good.  I will have to remember this at the end of the year when the holiday season rolls around again.
