Lemon Meringue Pie Milkshake

I picked up Bobby Flay's Burgers, Fries, and Shakes cookbook a couple weeks ago from the library.  While many of the burgers sound amazing this milkshake really stuck out to me.  It will be a great thing to make while the parents are visiting next month as Lemon Meringue Pie is my father's favorite desert.


Lemon Meringue Pie Milkshake

1/4 c. whole milk
1 tbsp. grated lemon zest, plus more for garnish (optional0
2 tbsp. fresh lemon juice
3 heaping tablespoons store bought lemon curd
11 oz. premium vanilla ice cream (about 1 3/4 packed cups)
fluffy whipped cream
Pizzele Cookie for garnish

Combine the milk, lemon zest, lemon juice, and lemon curd in a blender and blend for 5 seconds.  Add the ice cream and blend until smooth, about 10 seconds.  Top the shake with fluffy whipped cream, some lemon zest and a pizzelle Cookie, if desired.  

Makes 1 16 oz or 2 oz milkshakes




I can't wait to try this next month if I can hold out that long.

  1. Holy calories that sounds freakin' amazing. And totally worth the 8 mile run & an hour of Pure Barre to work it off ;)
