Move It Mondays

Wow!  I can't believe we have finished 2 months of 2011 already.  Where is this year going?  
I got in most of my workouts last week.  I didn't get in all the arm and ab workouts but I hit everything else.  I took my measurements and haven't lost anymore.  Boo!  I am sticking around the same with weight too.  It went up the week before last but is now back down.  I am so going with that is because I am building a lot of muscle by actually keeping up with a strength workouts.  I am determined to see some changes in March.  I am going to switch up my routine a bit next week.  And I am going to steal the idea from CT Cupcake and not buy any Easter candy for the month of March.  And I also need to stay away from any offered to me.

Girls Night Out


A group of gals got together last night for dinner and then to a painting class. 
We hit Chili's for dinner before hand and had the worst service.  I got there last and ordered an appetizer for my dinner after everyone else ordered appetizers and got mine first.  Everyone else got their meals about 10 minutes before we were to be at the paint place. 
We went to a place in down town Olive Branch.  And you know you are in the south when the directions involve turning down a dirt road in down town.

We had a bunch of snack foods which included some of the other gals meals since it took so long to get our food.  I made some of the White Strawberry Sangria.  And there was plenty left so I am sitting here drinking it while I finish this post.

Random Wednesday

**  I got my taxes done tonight.  Glad to have that over with.

**  I got my passport pictures taken today and my appointment to turn in my application is next Thursday. 

**  I got to hang out with S, H, and G Saturday night.  It was fun.  Though now G is sick so say a little pray the little guy gets better soon.

** Really enjoyed the spring like weather over the weekend and I hope it comes back to stay soon.

**  My youngest uncle retired from the Air Force today.  He was the last of three men in my family to retire in the last month.  Yep he lasted longer than two nephews.  I am so proud of all their service.  Now to get my butt in gear and get their cards in the mail.  By the way Hallmark has entering the Air Force cards but no retirement cards from the Air Force.

**  Saturday night S and some other gals are going to one of those painting classes.  This should be interesting as I can't draw a straight line with a ruler.

**  I can't believe I have almost 80 followers.  I am so happy so many people want to read my random thoughts.  Thanks for stopping by daily.

I knew when I moved into the house I wanted some vintage movie posters.  I picked out My Fair Lady and Gone with the Wind because they are two of my favorite movies.  I needed a third poster and finally settled on The Littlest Rebel because it had the colors the other two posters did and I really love Shirley Temple.  It was a hard choice to make because it was that one or Rebel without a Cause.  Some days I wished I had James Dean to look at every day.

Grilling Time

The last week we went from freezing temps and snow to spring like weather.  I have so enjoyed all the nice weather.  I was sad that today was cloudy and full of high winds to end this long weekend.  So last night I pulled off the grill cover and enjoyed some time on the patio.  My first thought of what I should grill was Caribbean Chicken Kabobs that I fell in love with last summer.  But then decided to wait until the spring has really arrived, our temps are going back down this week, so I made burgers.  I won't lie usually I buy the pre-made patties but yesterday I grabbed some ground beef and mixed my own.

Fiesta Ranch Bacon Cheddar Burgers

1 pound ground beef
1/2 package of Fiesta Ranch dressing mix
bacon bits
Kraft Three Cheese Cheddar blend shredded cheese

I mixed all the ingredients together, and was so wishing I had the Kitchen Aid mixer to do the work like my daddy does.


They turned out really yummy!


I made okra and blue cheese potatoes to go with it.


I will making these again during the spring and summer.

Wow!  Another week has flown by.  I feel like 2011 is going to be gone before we know it.  
My goal for the past week was to hit the gym 4 times for cardio.  That didn't happen I only made it twice but I did spend 2 days at work moving boxes around so I am counting that.  Especially since I spent between 3 & 4 hours on Friday alone working on that project.  
My other goals were to get in 2 ab & two kettlebell workouts.  I got that in.  I am so proud of myself for hitting this goal.  I am terrible about slacking when it comes to strength workouts.  Now to keep up the good work.  
I did okay with eating.  There were some bumps in the road.  We had cupcakes this week for a co-workers birthday.  And then there was the evil bag of all red starburst jelly beans.  Why does the Easter candy have to already be out.  Jelly beans are my weakness and I love the red flavors so a whole bag of only those are killer to resist.
I did spend some time with my Wii fit again this week.  I love beating my previous scores.  And more important realize I am getting better at some of the exercises.
I am ready to really get back in the gym this week.  And keep up all my ab and kettlebell workouts. And I am also getting excited that next month the Self magazine yearly Body Challenge will start.

Tuscan Chicken Simmer

I tried this about 2 years ago and enjoyed it.  I decided it would make a great Valentine's Day Dinner.  I got it off the Kraft foods website.  I changed it up a bit tonight though by using some of the new Philadelphia Italian Cheese & Herb Cooking Creme.  

Tuscan Chicken Simmer

4 small boneless skinless chicken breast halves
4 oz. Philadelphia Cream Cheese, cubed
1/4 c. water
1/4 c. pesto
2 c. grape or cherry tomatoes
1 c. Kraft Finely Shredded Italian Five Cheese blend

Heat large skillet sprayed with cooking spray on medium-high heat.  Add chicken; cover skillet with lid.  Cook 5 to 7 minutes, on each side or until chicken is cooked through.  Remove chicken from the skillet; keep warm.  
Reduce heat to medium.  Add cream cheese, water, pesto and tomatoes to the skillet.  Cook, uncovered, 2 minutes or until heated through, stirring occasionally.


Return chicken to skillet.  Cook and stir 1 minute or until chicken is coated and heated through.  Sprinkle with shredded cheese.  
It suggest serving over ravioli or fettuccine.  I put mine over rotini tonight.



I used the Classico traditional basil pesto.  You can change the taste just by changing the pesto.  I need to try a different one next time.

We have been friend since our Freshman year at Ole Miss.  My life would not be complete without her in it.  And not just because she has given me two kiddos to love to death.  But just for her how funny and silly she can be and how much she brings it out in me.  Nanny thought we were crazy after knowing each other for 2 months already promising that we would be in each other's weddings, by the way one day you will hold up your end of that one my dear lady.

Happy Valentine's Day


I hope everyone has a fabulous Valentine's Day.  
I decided to celebrate the holiday this year and cook myself a nice dinner.  I also picked up some tulips at the store today.   


I wish I had one of these sweet treats for dessert but I will be having apple crisp instead.

Move It Mondays

How did it become Monday again?  
Last week I worked out 3 mornings.  And yes I am so counting the snow day when I worked out that morning.  I got in 2 abs and 2 arm workouts but only got in the one kettle bell workout.  Due to all the crazy weather we had last week I only hit the gym once.  But I did play on my Wii Fit 4 days and on the snow day I got in 1 1/2 hours on it.  I am glad I didn't sit on my butt because it sure was tempting in the freezing temps we were having.  I didn't eat so well last week though.  I did give into those comfort food cravings.  
This week I am going to get back on the ball with my eating.  And keep up the workouts.  If I can get in the second kettle bell workout I will be excited.  And I am so ready for 4 nights in the gym.

Think Pink

Last Saturday the Memphis ZTA alum group hosted the Third Think Pink Luncheon.  I didn't get many good pictures because I didn't realize the flash was off on my camera, who turned it off?  I went last year when they honored my friend Molly for her 20 year Anniversary.  This year they honored one of the local DJs Ron Olson and his family.  I don't have a picture of him but he was wearing a bright pink vest and tie.

They also had several tables set up outside the room for silent auction items.  By the time I got there the items I was interested in had already gone to high for me.  :(
We did have someone win an autographed copy of John Grisham's new book.


There is also a fashion show sponsored by stores at Saddle Creek Mall, which is where the Race for the Cure starts every year.  Molly modeled with her new grandson Miller.  
Thankfully the weather held off and we were able to have the luncheon last weekend.

First Crush

With Valentine's Day coming I got to thinking about my first celebrity crush.  
Mine was Donnie Wahlberg.


Yes I was a huge New Kids on the Block fan.


That Boston accent just melted my heart.  


Look at that crazy hair.  Okay yes it was the 90s and we all had crazy hair.


Until I was searching for pictures I had totally forgotten about the cartoon.  And I doubt I ever missed an episode.


I had or still have this key chain.  There was not much I didn't own that was either Donnie or NKTOB.  When the came out with a new album several years ago my father offered to go up in the attic and get it all back down for me.  My walls were even plastered with pictures of the group and Donnie everywhere.  Okay Donnie only was allowed to be put on the wall above my bed.  All three of the pictures of Donnie here were on that wall. 



And he is still a hottie.  Yes, I admit I still have a crush on him.

Another snow day

The Memphis area got hit with snow again yesterday.  I measured this morning to find I had 5 1/2 inches and the prediction was for 2-4 inches.  It started at snowing around noon and our office closed at 2:30.  I should have left sooner than I did because it was so nasty by the time the office closed.  My workout buddy MB and I decided to stick together on the way home.  We didn't get very far before she was fishtailing and I was sliding so we pulled into the Schnucks grocery store and waited it out for around 2 hours until she got motivated to drive back to the office.  I was still scared but after we drove it we went back to get my Jeep.  We hung out in the office playing online until her hubby came to get us.  It took us around an hour to get home once he picked us up.  It was slow going and the roads were getting icier the closer we go to Mississippi.  The main road we live off of was already turning into a sheet of ice.  My office opened at 10 this morning but already decided there was no way we were getting back out on that today.  So I will be there tomorrow with a mountain of work because my whole team has now called in.  Boy is Friday going to be fun.  I will be packing my lunch and working all day.  So day I am doing almost nothing but enjoying an extra day off.
