Move it Mondays

I can't believe today is the last day of January.  Where has this month gone?  Not that I am overly sad as it means we are closer to spring.  
I did really well this week with workouts.  I hit the gym 4 days this week and got in at least 25 minutes each time.  My knee was really bothering me Monday night so I didn't last long.  I have learned not to push it to far when they are bothering me or I won't be able to workout for several days after that.  I used my Wii fit 3 days last week, one ab workout and one kettlebell workout.  
And I am so excited I got my sorry butt out of the bed 3 mornings to workout before work.  Now the goal is to keep it up.  It has gotten easier to get up and workout before work.  I have realized that I don't drag into the office as much on the days I do some sort of workout before work, and most days that is when I do my abs or strength workouts.  
I am so excited to say that I lost 2 pounds since the beginning of the year.  Not a huge number in one month but I am quite excited about it.  And I took my measurements over the weekend and am down 1/4 inch, all in my abs.  I was a little sad not to see more and that nothing came off my hips but I will take the losses anyway or anywhere they come.  
My goals for this week is to get up and workout 3 days again and maybe a 4th day.  And I want to get in two ab workouts this week.  I need to start working up to more strength workouts but I know me I need to concentrate on one thing at a time and I will get there.

Random Thoughts

  • I have not been very inspired this week to post.  I think I am having a case of the Janaury blahs.  I am happy that this week I get to work a full week.  We had snow again last night but it never got cold enough to stick.  Yeah!  My desk at work is piled high and I so need to get that down.  I have even been thinking about ducking into the office for a couple hours this weekend.  Today didn't help.  They started switching us from the old company servers to the new ones and there were all kinds of issues for the one member of my team that switched last night.  I am not looking forward to what will happen tomorrow when the rest of us switch tonight.  I am so going to be having a drink tonight.  And as tempting as it was I didn't skip the gym.  Big plus for me.  
  • I am so wanting to take a weekend trip.  But don't know where to go.  And knowing that might help to find people to run away with me.   
  • I am excited that Kenny Chesney is coming to town in May but don't think I can afford to go.  Maybe I will luck up and win some.  
  • I actually finished all my January magazines this month.  I haven't read them all in the same month in I don't know how long.

Move it Monday

Wow! Another Monday where is January going?  I hope the year slows down a bit.
I will admit that last week wasn't a good one for workouts.  I only got in 3 cardio workouts and with the Wii fit.  I also only did one ab and kettlebell workouts.  I had high hopes of working hard over the weekend but woke up Friday morning with my sinuses draining.  And Thursday night was a bust due to the snow we started getting around noon.  Darn those weather guys were right again.  And they are talking about more for tomorrow night.  Boo!  
I am ready to start off this week on a good note tonight.  I want to see my cords get loser than they are already feeling.

Pork Tenderloin with Red & Yellow Peppers

I wasn't planning on trying another recipe this month.  But after seeing this one in the current issue of Cooking Light and couldn't get it out of my mind I had to go ahead and try it.  I saw several recipes in this issue but this one really stuck out.

Pork Tenderloin with Red and Yellow Peppers

1 (1 lb) pork tenderloin, trimmed and cut crosswise into 1 inch thick medallions
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 tbsp. extra-virgin olive oil
1 1/2 tsp. chopped fresh rosemary, divided
4 canned anchovy fillets, drained & mashed
3 garlic cloves, thinly sliced
1 red bell pepper cut int 1 1/2 inch strips
1 yellow bell pepper cut into 1 1/2 inch strips
2 tsp. balsamic vinegar

Heat a large skillet over medium-high heat.  Sprinkle pork with salt and pepper.  add oil to pan; swirl to coat.  Add pork to pan; cook for 5 minutes.  Reduce heat to medium; turn pork over.  Add 1 tsp. rosemary, anchovies, garlic and bell peppers; cook 7 minutes or until peppers are tender and pork is done.  drizzle with vinegar.  Top with remaining 1/2 tsp. rosemary.  


Yield 4 servings.  Calories 215 fat 10.1 g.  

The recipes says if you don't like anchovies, omit them and add 3 tbsp. minced olives.  I don't like anchovies but I forgot to get olives when I was at Kroger today.  And as you can see I didn't have yellow bell peppers either, the only two in the store looked really bad so I grabbed a green one.  I also used minced garlic instead of sliced cloves because I don't like eating the sliced ones.  
It suggests that you serve it with mashed potatoes.  


I also made some okra and garlic cheese biscuits.  
And believe it or not I cleaned my plate.  I woke up with my sinuses draining Friday morning and I didn't eat much all weekend until tonight.  Tomorrow I might use the leftovers and put them in a taco shell.

Bacon, Cheddar, and Ranch Pita chips

This year my goal is to continue trying new recipes.  I will be joining Jessica over at Kitchen Belleicious for her one recipe a month challenge.




And with the play-off games happening this weekend I pulled out these pita chips to make from my Southern Living Ultimate Christmas Cookbook.  Yes, I know a Christmas cookbook but it has some really great recipes that are great for all year long.
I love pita chips but they can get expensive to buy so I found a recipe a few years ago to try but had not been so good at coming up with variations.  So I was excited to see these and a few others in the cookbook.

Bacon, Cheddar, and Ranch Pita Chips

1/4 c. olive oil
1 1/2 tbsp ranch dressing mix
3 pita rounds (6 inch)
1/3 c. real bacon bits
1/2 c. shredded sharp cheddar cheese.

Combine olive oil and dressing mix in a small bowl.  
Split each pita bred into 2 rounds.  cut each round into 8 wedges. Place wedges on a lightly greased baking sheet.  Brush rough side of each wedge with oil mixture.  Sprinkle wedges with bacon bits and then cheese.


Bake at 350° for 15 minutes or until crisp.  Remove from oven; transfer to wire racks to cool.  


Yield 4 dozen chips


I had some Fiesta Ranch dressing mix and that is what I used.  I also used the authentic Mexican cheese blend from Kraft since that is what I had on hand.  They turned out really great.  These will be great to serve at a tailgate or in the Grove.  I found that they only needed to be cooked for 10 minutes or they get to brown.  Who doesn't love bacon and cheese?

Master Bedroom

I spent my weekend painting my master bedroom.  It feels so great to finally get this project out of the way.  I wanted to do it over Thanksgiving but got sidelined by the migraine.
I painted the wall behind my bed the same Pecan color I did the guest room last year.

The color for the other three walls is Oxford Blue from the Eddie Bauer collection at Lowe's.  I think the two colors look good together.  

I wouldn't have been able to get this done of S's father had not lent me one of his ladders.  I am grateful he did.  

With the NFL play-offs happening this weekend to keep me from being distracted I pulled out some cds to put in my stereo to listen to while painting.  Okay I did take a break yesterday to watch the Bears win.

My workouts turned out great this week.  I didn't get in all the ab workouts I intended or any strength either.  I did hit the gym 3 nights for 30 minutes.  And got in 30 minutes on the Wii Fit 4 days last week.   So I guess I did get in some strength, ab, and yoga work with the Wii.  I did want to do something besides that though.
I also spent the weekend painting my bedroom.  I am so sore from that.  I will play with the Wii fit later tonight.
So this week I want to hit the gym 4 times, 2 ab workouts,  and 2 strength workouts.  I will continue to use my Wii Fit too.

Pink & Green Thursday

Trish over at  Pink Preppy Lilly Lover host Pink & Green Thursdays.  I decided to hop on for the first time this week.




With the snow that hit the Memphis area and most of the south this week not to mention the highs for the last two days have been in the 20s and lows in the teens my mind went to throw blankets.








This one reminds me of one my grandmother would make.  And the love that goes into one of these always seems to make it feel warmer.

BCS Champions


Last night Auburn played Oregon played in the championship bowl.  


And Oregon took home the ugliest uniform trophy award.  I don't know how this was approved as their socks are so close to the color of the penalty flags.

Way to go Tigers bringing home the 5th Championship title in a row to the SEC.  Proving yet again that the SEC is the best conference in the nation.


I saw these cakes while searching for pics from last night.   They are perfect for the celebration.


I loved the huge smile and excitement on Nick Fairley's face.  

I said a few things last night I have not said in 15 years.  GO TIGERS and WAR EAGLE!!!  I came within 6 months of following in a family tradition and going to Auburn.  Instead I  made both families mad and went my own direction

Snow Day 2011

I really hope this is the only snow day we have this year.  I am not a huge fan. The weathermen started predicting snow for Sunday night into today early last week.  I just waited to see but did hit the store for a few things just in case.  They were predicting 4-8 inches in North Mississippi and they actually nailed it on the head.  It started snowing last night around 6 and didn't stop for at least 6 hours.  


Last night about about 1 1/2 hours of snow.  


This morning!  


Okay so a little under 4 inches of snow on my patio table.


Belle in her search for a spot without snow.  She hates the snow.  

I am going to enjoy the day reading, cross-stitching and napping.  At some point I will get in a workout too.  I decided to make caramel apple waffles this morning too.

Right now Belle is in her favorite spot my office window watching the neighborhood.





Move it Monday

Back for the Second week of Move it Mondays.  Thanks to all the sweet ladies who let me know how to add a button.  I am so excited it worked.  

I did well with workouts last week.  I got in 4 days at the gym for 30 minutes of cardio each day.  I only used the treadmill and the elliptical.  I should have gotten my butt up yesterday to go to the gym before the snow it. But I wasn't a complete slacker.  I did get in 30 minutes on the Wii fit.  
I only got in a workout one morning last week before work and it was an ab workout.  I got a couple questions about the ab routine I am using.  I went back and pulled out Jewel's ab workout that was in Shape magazine last summer.  You can find the routine here.  It is really simple and what I was doing before I went on vacation in the fall and really worked.   
I also played on my Wii fit 4 days last week.  I am really enjoying it and it will make you sore.  In high school I did step aerobics and loved it but didn't have the space until I bought the house to do it once I graduated and then my VCR broke and I couldn't find a dvd.  I realize now I should have looked on Amazon before giving it away but oh well.  I did the ab routines 2 days with the fit.  

I ate well last week too.  And the thing I am most proud of is giving up cokes for the whole week.  I had gotten to where I was relying on them to get through the work day.  

So the goals for this week is to workout 3 days before work.  I am shooting for strength workouts before work too.  And to hit the gym 4 to 5 days.  That might all depend on how soon the snow melts off.  As for the strength workout I am going to do still not real sure but I am leaning to going back to Jillian's kettle bell workout.  And continue to go without cokes.

Random Wednesday

  • I got home tonight after the gym to find a political flier in the mail.  Seriously the Republican primary is not until August why are you bothering me? 
  • I got up yesterday and did a workout before work.  I got in one of the two ab workouts I wanted to do this week.  This morning I was lazy, but in my defense I was sore from the workouts I had already done this week.  
  • I made some progress today in getting part of the 34 days I have to take this year of vacation planned.   So my goal for this month is to get my passport.
  •  While grocery shopping Sunday.  I ran into these.

Who eats bacon or cheddar bacon flavored popcorn?

  • I don't have a coffee table in my great room.  And came across a cute storage ottoman several months ago but needed at least two in its size.  But I saw this at Wal-Mart when I went to pick up the Wii fit Monday.  

Perfect for the price.  And it has two storage sections inside.  It will be good to put H & G some toys in for when they come to hang out not to mention a place to put Belle's toys when people are over.
