What's for Dinner???

I picked up another of the McCormick season packets at the grocery store.  This time it is for Caribbean Grilled Steak.  I have been trying to figure out the next item to try on the grill this year.  I was happy to finally be inspired as I have not been able to figure out a recipe I wanted to try recently.

Caribbean Grilled Steak.

2 tsp. minced garlic
1 tsp. ground cumin
1 tsp. minced onion
1 tsp. oregano leaves
1/2 tsp. crushed red pepper (optional)
1 tsp. salt
1 1/2 lbs flank steak or boneless beef sirloin steak
3 tbsp. olive oil, divided
1/4 c. fresh lime juice
1 whole pineapple, peeled, cored and cut into bite-size chunks

Mix salt and all of the spices except red pepper in small bowl until well blended.  Stir in red pepper to taste if desired.  Brush steak with 1 tbsp. of the oil.  Rub with 2 tbsp. of the spice mixture.  Refrigerate 30 minutes or longer for extra flavor.


Stir lime juice and remaining 2 tbsp. oil into remaining spice mixture.  Thread pineapple chunks onto skewers.
Grill pineapple skewers over medium heat 5 to 10 minutes or until golden brown, turning occasionally and brushing with 1/2 of the juice mixture.


  Grill steak over medium-high heat 6 to 7  minutes per side or until desired doneness, brushing with remaining juice mixture.



Slice and serve steak with pineapple skewers.


The steak turned out great.  I did forget to brush the steak while grilling with the lime juice mixture. I can't wait to see what it tastes like with the lime juice mixture too.  It wasn't all that spicy without it so maybe I can make it like this when the parents visit next month.
I cut up some of the remaining steak to use in tacos for lunch tomorrow.
