Pink & Green Thursday

Today's topic is something on my mind a lot.  I get my stitches out this morning and am thinking I might need some band aids for a bit. And it will be a lot better than the bandage and brace I have been using for the last week.  

These made me laugh.

I know a few people who would love these.

I have a feeling with 3 nephews I will end up getting used to these.

Where were these when I was a kid?

Move It Monday

Happy Monday!  Last week was a big bust for me after my accident.  I got in a good one Monday and some yard work Tuesday morning.  I also didn't eat well using the accident as an excuse to indulge and feel better.  I started to feel like crap by Friday without any workouts and eating well. I am ready to get back to eating well this week.  I am going to work on the Wii most of the week.  My finger gets hot already in the splint so spending very long working out probably won't work until I get my stitches out on Thursday.  Here is to a better week.

excuse the interuption

I don't know how much I will be posting in the next week.  I cut my finger yesterday morning working in the yard and ended up with 3 stitches.  because of where the stitches are the doctor told me not to bend that finger.  so typing is a bit hard.  I am used to typing fast so having to pick with one hand is frustrating.  I will keep up reading every one's blogs but don't know how much commenting I will be doing in the next week.

Move It Monday

I have to confess that I only got in two workouts last week.  I was having major issues with my sinuses and all I wanted to do was come home from work and crash.  I am lucky that even non-drowsy meds knock me out.  boo!  But on the plus side I didn't have much of an appetite so I didn't get that much.  I took my measurements early this month and I got a quarter inch off my abs & hips so far this month.  That made me feel better after not working out all week.  I am ready to get back to it this week.  And now with the warm weather I will be adding in yard work.  I meant to work on it a bit this weekend but it just didn't happen.

Mixed Berry Ice Cream

I finally broke down yesterday and bought an ice cream maker.  I have been wanting one for a couple years but didn't really know where I would keep it so I haven't done it.  I finally decided this was going to be the year and I would figure out where it would go.  I decided on the Cuisinart Automatic Frozen Yogurt Ice cream & Sorbet maker.  I went looking at prices on my way home from the salon yesterday and stopped at Kohl's first. Yep I left there with it as they had it on sale for $23.99 and I had a 15% off coupon.  I have a very hard time resisting a deal.  So last night I went through my notebooks looking for an ice cream recipe to try.   I found several I pulled out of the August 2004 Southern Living.  See I knew one day they would come in handy.  

No Cook Mixed Berry Ice Cream

1 (14 oz) can sweetened condensed milk
1 (5 oz) can evaporated milk
2 tbsp. sugar
1 1/2 c. whole milk
1 (16 oz) pkg. frozen mixed berries, thawed
2 tbsp. lemon juice
1/4 tsp. salt

Process the thawed berries , 2 tbsp. lemon juice and 1/4 tsp. salt in blender or food processor until smooth.

 Stir berry mixture into the milk mixture.

Cover and chill 30 minutes.  Pour milk mixture into freezer container of ice cream maker and freeze according to manufacturer's instructions.

Remove container with ice cream from ice cream maker, and place in freezer 15 minutes.  Transfer to an air-tight container; freeze until firm, about 1 to 1 1/2 hours.

The recipe is actually the one for strawberry ice cream but since I bought some frozen mixed berries a couple weeks ago for some Bellini's (yet to be made) so I used those.  I also used skim milk and fat free sweetened condensed milk.  It turned out great.  Now to decide what to make next.

Chicken Mini Empanadas

This is probably more of an appetizer recipe than a dinner but that is what I made it for.  I added Spanish rice to make it a meal.  I found this recipe in the  December issue of Food Network magazine.  

Chicken Mini Empanadas

2 (11 oz) pkg. pie dough mix
1 (9.75 oz) can white chicken meat, drained or 1  1/2 c. shredded rotisserie chicken
1 c. chunky salsa
1 (3 oz) can sliced ripe olives
1 c. shredded Mexican cheese blend
all-purpose flour for dusting

Prepare the pie dough according to the package directions for a double crust pie.  Wrap the dough in plastic wrap and chill.
Preheat oven to 400°.  In a medium saucepan, combine the chicken, salsa, and olives.  Bring to a boil, then reduce the heat and simmer 5 minutes. 

Remove from the heat and stir in the cheese.  Cool slightly.

On a flour dusted surface, roll out the dough to 1/8 inch thick.  Using a 3 inch round cutter, cut out 36 circles, re rolling the scraps as needed.  Place about 1 tbsp. chicken mixture in the center of each circle.  

Moisten the edges with water.  Fold the circles in half and pinch to seal.  Peirce the tops with a fork.

Place the empanadas on a baking sheet and bake 15 minutes, or until golden.  Serve hot.

The turned out really great.  I loved how flaky the pie crust turned out too.  I didn't have olive so I used a can of chopped Chile peppers.  And I went the lazy route and used pre-made pie crusts.  I think these will be great for tailgate parties in the future.  The recipe makes 36 empanadas but I only ended up with 30 from the pre-made pie crusts.

On the Hunt Part 4

I searched a couple other places like JCrew and Talbots for dresses but didn't see any that I liked on their sites. So the last place I checked out and found a few options was ModCloth.  I love looking at their dresses because they are cute and have the funnest names to go with them.  There are several I fell in love with.

This is probably my favorite.  I can see it being dressed up for the weddings and something fun to run around in with a pair of flip flops.

Move It Monday

Another week down. Another week of good workouts.  This week I didn't do any kettle bell workouts.  I used my Wii fit & EA Active 2 along with hitting the gym.  I could barely walk Monday and Tuesday after doing my first EA Active 2 workout.  My calves were killing me.  I set up a 9 week program with the EA active game and it set me to have 4 workouts a week.   The workouts are really challenging and change things up each day.  And I learned this week that I truly hate mountain climbers.  I didn't do the but a couple cardio items each time.
I haven't seen any weight change in the last 2 weeks or any measurement changes in a month.  But I swear I look slimmer but then maybe that is wishful thinking on my part.
This week I am going to continue with my EA Active and Wii fit games.  Along with hitting the gym and working in the yard.  I also want to get in 2 abs workouts this week.
Eating went well last week.  I brought my lunch every day and had one cupcake for a co-workers birthday Friday.  I didn't even eat out this weekend.  I am hoping to keep up the eating this week.

On the Hunt Part 3

A good place to turn for something nice to wear is Ann Taylor.  I found a couple cute dresses that could be used again.  Though there were several that were beautiful but I don't know where I would wear them again.  

I love the color of this dress.  It  must be a go to color because there were several dresses in this color.

The bow might be a tad big for me but it is still cute.

I love wrap dresses.  They work great with most figures.

On the Hunt Part 2

Yep, still hunting for a dress.  Okay only hunting online at this point.  I am trying to decide where I want to go look before just hitting the mall.  My favorite store is Ann Taylor Loft and I still have both gift cards I got for Christmas and my birthday to spend.

Move It Monday


The weeks are sure flying by.  I can't believe another one is in the books.  They seem to be flying by faster and making it harder to get in my workouts.  Okay that is probably just and excuse.

I am so proud to say for the first time this year I got in all the workouts I planned for.  Jumping for joy!!!
I got in 4 days of cardio, 2 kettle bell workouts, 2 ab workouts, and 2 arm workouts.  I also played on the Wii a bit too.  I am so loving some of the games that are on the Wii fit.  Makes it fun to workout when you really don't want to.

The Kettle bell workout I have been using for the last couple weeks came from Fitness magazine in May 2010.

You can find the workout here.  It also has a video to go with it.  This workout will really work up a sweat.  
Part of the reason I have been doing this one is it short and quick to do in the mornings before work.  And because I am scared to do Jillian's kettle bell workout in the mornings.  Let's face it I am a bit of a wimp and not sure I want to start my day off with Jillian because it is so tough.  I need to get over that fear so I can get some real change going on this month.  

I have a bunch of ab & arm workouts pulled out from magazines too.  I am going to start looking through them to decide which ones to change up to.  

Oh and I bought the EA Active 2 for the Wii today.  I did the first workout and I am so sore.  I am tempted to take it down to the easy workouts instead of the medium.  We shall see how this week goes.

Sunday Dinner

I had an idea pop in my head for a meal the other night.  But I still don't have a name for the dish, hence the title of the post this week.  I had some chicken in the freezer, leftover taco seasoning, and remembered that one of the flavors of the Philly cooking cremes is Santa Fe.  Y'all know my love of quick and simple dishes.

Chicken tenders or breasts
Taco seasnoning
Philadelphia Santa Fe Cooking Creme
Whole wheat penne

I sprinkled some of the taco seasoning on the chicken and used my grill pan to cook them.

 Once the past was cooked I put about 1/8 cup, I am so guessing there as I just put a big spoonful in the pot over low heat with 1 tbsp. of milk.

I only made enough for tonight of the pasta & sauce.  

The chicken and pasta turned out great.  I wasn't sure so that is why I only made enough sauce & pasta for tonight.  

And you know me I love those garlic cheese biscuits.  

The dish turned out really well.  I rarely cook anything without a recipe because I am so scared it won't turn out.  At least with a recipe in a magazine or cookbook someone has already tried it and decided it tastes good.  Now I need to decide whether to use the last of the chicken for something else or make more pasta & sauce.

Pink & Green Thursday

I am so excited it is Thursday.  Not only is it Pink & Green Thursday with Trish but it is means tomorrow is Friday.  Today's theme Ice Cream.  Because who doesn't love that treat not matter the weather.

First thing needed is a cute ice cream maker.
