Snack Attack

While in college I saw a recipe on the back of the box of Triscuits for pizzas using the crackers.  I ran with that idea for a snack and made Triscuit Chicken Nachos.  You can use them for a snack or like me a quick lunch or dinner.    All you need is some triscuits, shredded cheese, chicken tenders, and salsa (add anything else you might like but these items I always have around).


Put a layer of triscuits on a pan or a  plate.  And then add cheese and chicken.





I have found that baking them in the oven at 350° for ten minutes makes the cheese less greasy.  Of course you can put them in the microwave until the cheese is melted.
