Winter Weather

The weather guys are a little off.  Yes we got the winter weather they couldn't quit talking about all week.  But at least in my burb we got more sleet and ice.  There was a bit of snow yesterday morning but it didn't stick around.  I didn't go into work yesterday because of a migraine and for once I am not sad I did because it kept me off the roads.  And due to the ice I won't be getting out again today.  I hope I can get out tomorrow to hit the grocery store.  And if not I will be hitting it up after the gym Monday night. 

Only one of these I took outside.   I did that when I went out to get the mail.  I hope everyone has a lazy Saturday too.

Dinner Tonight

I quit being lazy tonight and cooked dinner.  I tried three new things tonight.  So does that makeup for the last two weeks?
A couple weeks ago I picked up on clearence Mexican Chili & Lime marinade.  I used that on some chicken tenders tongiht.  They turned out yummy!  I also made some corn thinking I would need something to cut down on the spicy of the chicken and the Easy Skillet Pimiento Mac N' Cheese.  I freely admit to never making mac n' cheese except from the wonderful blue box from Kraft.  I got the recipe from good ole Southern Living (this is becoming a pattern).  :)

1/2 (16 oz) package penne pasta
2 tbsp. all-purpose flour
1 1/2 c. milk
1 c. shredded sharp cheddar cheese
1 (4 oz) jar diced pimiento, drained
3/4 tsp. salt
1/4 tsp. pepper
pinch of paprika

1. Prepare pasta according to pacakge directions.
2. Whisk together flour and 1/4 cup milk.  Add flour mixture to remaining milk, whisking until smooth.
3. bring milk mixture to a boil in a large skillet over medium high heat; reduce heat to medium-low, and simmer, whisking constantly, 3 to 5 minutes or until smooth.  Stir in cheese and next 4 ingredients until smooth.  stir in past, and cook 1 minute or until thoroughly heated.  serve immediately.

There are several variations listed too.  And at some point I am going to try those too.   I will admith I was not paying attention and used the whole box of pasta.  Oops!  So next time I pay attention and it is really cheesy, don't worry it was still very yummy!!!  I used whole wheat penne and instead of the cheddar cheese i used Kraft Mexican Style Cheddar Jack. 

So the third thing I tried tonight was Turtle pudding.   Last spring I found a box of Jello Turtle Pudding mix on clearance.  It sounded yummy so I picked it up and finally got around to trying it tonight.  If you go looking for the pudding mix it did state it was a holiday special addition. And I did see it out again this year.

All and all a great meal tonight.   And I am looking forward to eating the leftovers this week. 


The weekend has been so dreary.  The nice warm temps are disappearing and it has been so cloudy.  We got some nasty storms last night and there is a chance of some more tonight.  ugh!  My yard is mushy  in places just from last night.  Belle and I went out to throw the ball around before it gets cold again.  And she started to get muddy pretty quick so we came in.
I spent the weekend resting. This week was long thanks to being sick.  Yesterday I woke up early to get the oil changed, hit Wal-Mart, worked on the Southern Lady's present, and hit the library.  Yep I alreay finished the Shopoholic series.  I am so sad that there are not anymore Becky Bloomwood adventures.  The series is so cute and quick to read.  Last week I picked up another series that sounded good.  I am glad that it has been.  No, I am not done with another book.  I am still reading this one. 

It involves a female PI from the Mississppi Delta.   Wonder what caught my attention there?  I picked up a second book in the series this week.  Along with a Robert B. Parker book.  I have read several of his books and enjoy the Jesse Stone movies, so I was sad to hear of his death this week.  

I am feeling better.  And am so ready to hit the gym tomorrow after work.  I feel like such a slacker for not working out in a week.  So do I start counting over the number of days I have done the Shred?

Retail Theorpy

I have been feeling sick and wish I could get over it and back to the gym.  So I got out at lunch to try and chear myself up.  I hit up Ann Taylor Loft to spend my gift cards and because I got an email telling me today is the last day of buy one get one 50% off.  And I was so disapointed that I couldn't find but one thing.  And it is something I have my eye on since the week after Christmas.  At least I had coupons to use that my family got when they bought the gift cards. 

I can't wait for the spring weather so that I can wear it.

Week 2 workouts

Last week didn't turn out as well as I had hoped.  It started off with a headach on Monday.  I did get in two days of cardio and Jillian's workout.  Then Thursday I had a meeting and well Friday I was lazy.  Saturday I hit the gym after running a few errands but never got around to doing Jillian's workout again.  I started coughing when I got up from my nap.  And just felt crummy the rest of the weekend. 
I did make it to the library to pick up a few books.  I finally found these in


I have almost finished Shopaholic and sister.  These books are so cute and such fast reads.  I also pick uped a new series that sounded cute too.  I will update on those later.
I also picked up the last thing I need to make The Southern Lady's birthday present.  And that will be my project for the weekend. 
I am still not feeling that great.  So I am back to the couch.  I hope I am back to myself tomorrow and can hit the gym again.

I had to get out today and run an errand.  And it took me by a Dick's sporting goods.  And I came out with these

I was so excited that I finally found a pair in my size.  And then they were also the blue ones.  Blue is my favorite color.  I wore them at the gym tonight.  And I was feeling it in my calfs within 10 minutes of starting.  And I have to admit I wimped out only got in 20 minutes tonight.  In all fairness I did leave work late.  And I knew I had to get home to do Jillian's workout before Biggest Loser started tonight.

I made one of my favorite quick dinners tonight.  Pita Pizza.   

Take a pita and spread it with salsa.   Top with cheese and chicken strips. 

And because I had some of this on hand.  I topped it with a bit of it too.

It turned out really yummy!   I mix it up on occassion too.  I use ranch dressing instead of salsa.  And if you have any leftover pasta sauce that would work too.

Now to go cuddle with Belle and watch the rest of Biggest Loser.

Workout update week 1

It is hard to beleive the first full week of 2010 is over with.  It was a crazy week.  We have had some freezing temps in Memphis and even saw a bit of snow on Thursday.  And had snow flurries on Friday.  Thankfully it is going to start warming up tomorrow and by the end of the week it will be in the 50s.  Several friends have been posting that thier pipes are frozen even the drain pipes from the washer.  I have to admit this has me scared to wash tonight but I talked to my father and he said I should be fine since I haven't washed since last Friday and no water should have been left in there.  And it helps my laundry room backs up to my closet.  Let's hope so because I only have one set of workout clothes left clean.
Okay sorry to get off topic there.  Workouts.  I have to admit the last three days I didn't do a single workout.  I know terrible.  I did get the house clean after coming home from getting my hair done yesterday.  So at least I wasn't a complete bum.  I have now done Jillian's 30 day shred 5 times.  And yes she is kicking my butt.  Monday I could hardly walk to I didn't do it.  But went back for more torture on Tuesday and Wednesday.  I also hit the gym for five days in a row to get in an additional 30 minutes on the treadmill.  Between the two I hope to start seeing results.   I am still struggling to make it completely through Jillian's workout.  During the strength circuits she splits them between one upper body move and one combined move.  I have trouble doing all the reps when working the shoulders.  But at least I don't stop the whole move and continue with the squats or lunges.  And for cardio the pretending to jump rope gets me along with the kicking the butt.  But for both of those I am able to do more than the first night. 
The goal for this week is to work in some yoga and pilates.  And not to skip a day of Jillian.  I have two things to look good for in March now.  I want to wear something cute and hot to see Eric Clapton and this week we planned a girls weekend to Natchez.
And except for Thursday night and yesterday the eating has been going well.  And no eating out this week.

I woke up to a dusting of snow this morning.  No where near the 1 to 3 inches predicted.  And so sad this is all we got for the freezing temps we are having this week.

I thought about taking the picture at the last moment before I left for work.  The roads were clear going in just wet.  Thankfully! I still took my time going and decided since the temps were dropping fast to take some PTO time and leave early.   There are a few to many overpasses I go by on my way home and was worried about them already freezing.  For the most part the roads I took going home, went the long way, were dry.  I hope it is the same in the morning.  They are predicting snow flurries during the night and in the morning.

I love to cook.  But being single I don't get to do it often.  This year I want to finally going to start trying all the recipes I have been collecting for years.  I have two notebooks and a half full recipe box full of them.  And I won't lie almost half of them are for desserts.  I love my sweets!!!
So Sunday I decided I just had to break in the new crocpot.  I had to go searching for new recipes because I didn't have any for a crocpot.  Darn!!!  I found one on  I picked Slow-Cooker Tex-Mex Chicken.

1 pound bonless, skinless chicken breasts, cut into 1 inch wide strips
2 tbsp taco seasoning
2 tbsp. flour
1 each green and red pepper, cut into 1 inch wide strips
1 c. frozen corn
1 1/2 c. salsa
1 c. shredded Mexican four cheese

Toss chicken with seasoning and flour in slow cooker.  stir in vegetables and salsa; cover with the lid.
Cook on low 6 to 8 hours (or on high 3 to 4 hours)
Stir just before serving; top with shredded cheese

Special Extra: serve over hot cooked rice topped with sliced green onions and chopped cilantro

I didn't have any rice on hand so I used couscous instead.  But forgot about the green onions and cilantro.  It was okay.  I found it a little bland.  I have been trying to think of ways to add some spice to it and try it at least one more time.  Maybe the hot taco seasoning.  the salsa I used is already pretty spicey and I won't change that.   Something to think on.

Home Office

One goal I have this year is to finish decorating a room.  I am not good at all of that.  I don't know if money will allow me to finish this year.  I do have a start on it.   The room I want to finish up is my home office. 
I painted it two years ago.  I have a few spots to touch up where the walls and ceiling meet.  I see them but if you are not really looking you probably wouldn't notice.  I can always touch those up before I put the house on the market.  The color you ask.  Benjamin Moore Sour Apple.   I saw it in a layout in Better Homes & Garden that spring and fell in love with it. 

So this is what the office looks like now.  One big thing I need is more storage.

Need a new bookshelf.  It is crammed full.

The spot I really want storge for. 

And I might want to get the printer off the floor.

I got the chair and pillow last year to replace the one I had. 

Not a huge room.  And it needs some major storage.  I found the baskets at Wal-mart for $14/set (one for dvds & one for cds).  I have two and that is not enough and they are just sitting everywhere and this is driving me crazy.  I have been looking around for about a year for a piece that will work well for storage and as a spot for my stereo & tv.  I have found one that I keep going back too.

It is also from Wal-Mart.  I keep looking at it.  Might as well admit it to myself that it is really what I want.  It is from the Canopy Living collection.  And is listed as a media stand or buffet.  Great spot for lots of storage for cds, dvds, and office supplies.  I know I need something that can do it all because there aren't many desks out there made with storage now.  Don't get me wrong I love the one I have it is an antique.  My father found it at a thrift store not long after the parents got married and mother started talking about going to grad school.  He refinished it and did his best at fixing the drawers that bottoms were falling out.  After over 30 years it is beginning to fall apart, though I am sure someone with more woodworking skills then we have could fix the drawers and back and it would be great.
As for a bookshelf.  I don't know if I want a traditional style or a open one.  But that might be one of the last items that I buy.  First I have to get up the nerve to ask someone to not only help me get the media storage home and put together.  I am not good about asking for help.  Oh and to have somewhere to put the cedar chest.  I want it in my guest room but there is not a lot of room with my brother's tv and stand still in there.  Maybe I can get the parents up here to help and then they can take that back but I will not hold my breathe on that one.

Oh I almost forgot a shot of the curtains.  D hung these when he came to stay in November.

I also bought this about  a year ago.  I am thinking of hanging it centered over my desk.  Or maybe even over the door.

Any suggestions are always welcome as I am not good with this decorating thing.  That gene seems to have totally skipped me.

Fitness Gear

It is the begining of a new year and like most of America I am wanting to get in shape.  No, I didn't make it a resolution because I never end up sticking to them.  So it is a goal since I am better at getting those done.  And it really should be something I concentrate on for my health too.  The last two weeks I have not made it to the gym a single time and have been eating junk.  And boy can I feel it.  I am so sluggish.   Time to get back into my old routine and hopefully this year I can fit back into my capris. 
With the sales happening I hit target to add to my fitness DVD collection.  I got brave and bought

Yep!  I might be slightly crazy but I did it.  And probably wouldn't have if they weren't on such a great sale this week.  I gave it a try this morning when I got home from the gym.  And boy is it a killer.  By the end I was having to  march in place instead of doing a cardio move in the dvd (glad Jillian wasn't really in my living room to see that) and my legs were a little wobbly.  But I managed to make it through.  oh and it was the leven on set I was doing.  I spent 30 minutes walking on the treadmill before I came home.  Boy, what two weeks of no working out will do to you. 
I have been thinking about buying a kettlebell for at least a year.  And still am not decided on it.  I hear great things about what they can do for you and I even saved a workout from Self magazine last year for them. 

I wobbled on deciding all week.  And finally decided Yes I want to get one.  And then couldn't figure out what weight to get.  I don't want to get one to light and seem like I am not getting any work done to soon but I don't want it so heavy that I will give up.   ugh!  Some days I just hate having so many options.   I figure that their will be more sales in the next week or two since there usually are sales on fitness gears the first couple weeks of January.
I am in search of new sneakers too.  I know what I want but am having trouble finding them.  My grandmother gave me money for Christmas and birthday last week and said to spend it on something I really want. 

I wouldn't normally spend $100 on a pair of sneakers.  But why not since she said to spend it on something I want and not save it.   And that little extra the Reebok Easy Tone say they give I desperatly need.  I usually hit Sports Authority sale racks for sneakers that are considered out of season.  One pair I bought last year were $125 New Balances that I got for $40.  All that matters is that I still like them who cares if they are the in season sneakers.
I am ready to give Jillian's workout another try tomorrow.  And hit the gym for some more walking, yep my knees are in terrible shape so I don't run.  I am going to work towards gettting at least two days of yoga and pilates a week too.  Bikini body here I come!!!
